Yes that is what I am aiming for! I got a little behind this last week and have quite a few email to go through. That is my goal for today! But Keep the recipes coming! We are lacking in a few categories. I will try to make a list and post tonight as well!

Another recipe.. & I do want this cookbook when finished too.

Chicken Picata' by Cheryl K-falls Farmgirl, Oregon

1. Take 2 large Raw boneless Chicken Breasts (pounded thinly between a 2 layers of saran wrap or in a baggie) to about 1/4in inch thick fillets
2. Dredge seasoned chicken fillets in seasoned flour (1/2 tsp salt, 1/2 tsp black pepper, 1 TBLS lemon pepper )
3. Drizzle Olive oil in a skillet, when hot drop chicken & fry for 3-4 minutes each side. Do not over cook..
4. In same skillet, Add 2cups chicken stock, 1/4 cup lemon juice & 3 slices of fresh lemon& return to stove on medium heattil hot
5. Mix a 3 TBLS cornstarch with 1/4c cold water to make thinkening, (dissolve starch completely)
6. Pour starch mixture into chicken stock, bring back to low boil. It will thicken( like thin gravy)
7. Add 2-3 TBLS whole small capers to thickened mixtures. I add more lemon juice & slices here. Do not thicken to a heavy gravy.... you can add more chicken stock if needed.
8. Return cooked chicken to hot thin gravy mix. Simmer 6 minutes or so until flavors blend.
Serve Hot with steamed rice side dish or angel hair pasta.
Enjoy.

that sounds yummy,Cheryl. Here is what I am making today for supper tonight (I have to work tonight) I took 4 boneless porkloin chops (about 1 inch thick) ground them in my food processor with some salt and pepper, browned the ground pork in a large skillet, as it started to become less pink i sprinkled about a Tbsp or 2 of flour over it. After all the pink was gone I poured a can of green chile enchilada sauce and a can of drained and rinsed black beans into it and am letting it simmer for about 20 mins...then I will make burritos for the hubby... walah! It will also be easy to take a couple for my co-worker and I for later. It is yummy so far....yes I have tasted! enjoy your Sunday, ladies :)

I just sent out two recipes. One is a gluten free bread recipe and the other is corn sandwich biscuits (also gluten free.) I hope you get them OK!

Hey guys! I have been SOOOOOO busy with stuff at work the last week and haven't given this project the time it deserves. I was able to get through a few emails last night and think I have 6 more to look at. I will do my BEST to put the "NEED" areas up here tonight. I cannot access my email at work so I can't use my "breaks" to look through the stuff. Bear with me! I am thinking off the top of my head that the Beverages and Appetizers area is one that is pretty skimpy and Vegetables is another. I'll look into the rest tonight!

Sorry Melanie! I can no longer take any recipes. I have sent the copy off and am waiting for a proof incase I need to make any changes. I am hoping the book will be ready sometime in the beginning part of February. Check back then!
