DH birthday was today and I had the oven and stove top tied up with bread baking and canning so I tried this new recipe for a cake made in a crockpot. It turned out to be really yummy! We both loved it. If you don't have a working oven, here's an alternative:

Chocolate Mud Cake

1c flour
2tsp baking powder
2Tbsp butter
1/3c semisweet chocolate chips
1c sugar, divided
1/2c cocoa, divided
1Tbsp vanilla extract
1/4tsp salt
1/3c fat free milk (I only have whole milk)
1 egg yolk
1/3c brown sugar
1 1/2c hot water
vanilla ice cream

1. Spray slow cooker with cooking spray (I don't use cooking spray so, I just rubbed a stick of butter all around the inside).
2. In a mixing bowl, whisk flour and baking powder together; set aside.
3. In a large microwave safe bowl, melt butter and chocolate in microwave on high for 40 seconds (mine took 120 seconds). Mix well.
4. Whisk 2/3 of the cup of sugar, 3Tbsp of the cocoa, vanilla, salt, milk and egg yolk into the chocolate mixture.
5. Add flour mixture. Stir until thoroughly mixed (it will have little chocolate lumps).
6. Pour batter into slow cooker. Spread evenly.
7. Whisk together remaining sugar, remaining cocoa, brown sugar and hot water until sugar is dissolved. Pour over batter in slow cooker. DO NOT STIR.
8. Cover and cook on high 2 hours. The cake will be very moist and floating on a layer of molten chocolate when it's done. And you'll know it's done cooking when its edges begin to pull away from the sides of the insert and nearly all the cake is set.
9. Turn off slow cooker and remove lid. Try not to let the condensation from the lid drip onto the cake. Let cool for 25 minutes before spooning into individual bowls. Serve with vanilla ice cream.

This cake was soooo yummy. It's not overly sweet which is why we liked it so much. But if you prefer sweeter, I suppose you could substitute milk chocolate chips for the semisweet chips. Or if you like chocolate and peanutbutter together you could try peanutbutter chips!

HAPPY BIRTHDAY!!!! To your hubby. Hope his shoulder is well on its way to healing. I know how long it takes and the kind of patience the poor wifey needs. Been there done that. I will try to call you sometime this week Lisa.

Laura, dh says thank you. Yep - God grant me patience and the strength to hold back when I want to strangle him!

Enjoy the cake, Krisine. It's kind of fun to make. I wonder how well it would do over open coals in a dutch oven? Hmmmm.

Lisa, I have a couple of questions.

What size is your slow cooker? Do you preheat or just put the ingredients into a cold crock?

I think the one I used is 3 quarts? The cake rose to fill the crock about 2/3 full. So, if yours is a bit smaller, I'm sure it would work. A bigger one would make a thinner cake, I think, and you'd probably have to check it before 2 hours. I have a big oval 5 quart but I used my smaller round one. I did not preheat the crock at all.
