Hi girls, I was wondering if anyone has any good recipes for spaghetti squash? I bought one today but I don't have any idea what to do with it. I'm hoping it doesn't taste anything like squash or dh will not eat it. The girl at the market said if it was prepared right dh would never know it wasn't pasta. So I bought it hoping you girls would have some yummy suggestions.

I like to cook mine in the oven, just cut in half, cut side down with just a litte oil on a roasting pan until the insides are cooked, scrape it out and saute it up with butter or olive oil, salt pepper and I serve with a dallop of ricotta cheese or a sprinking of parmesan. YUMMY!!!!

Thanks girls, Diana, I thought there was some really good sounding recipes on the first site you listed. Heather, your way sounds really good too, I never thought of sauteing (sp) and putting ricotta cheese with it. I just may be able to get dh and the kids to eat it now. Thanks for the ideas.

Melissa, I'd like to know how it turns out and if your dh could tell. Mine is the same way and won't eat what's good for him unless I disguise it and don't tell him what it really is!

I like it how Cats makes it as well! Roasted is the best.

I personally could just eat it with butter and salt! lol

But, if it needs sauce, I think heavier is better then light. In other words, I don't think it's great with a tomato sauce. I think it's better with a Creamy sauce.

It does taste like squash. Sorry to say. It doesn't taste like pasta. It just has a different texture. But, I think it's delicious!

I think one thing women do that they shouldn't, is TELL their husband what they are making.

Here's how it goes......if you are making pizza for your husband, do you tell him every ingredient you put in it, or do you just throw it in front of him? Same with any other favorite of his, we don't list every ingredient in his favorite chicken fried steak etc. So WHY list every ingredient and announce we are making him a "new" healthy recipe! Don't! Just cook it like you would any of his other favorite meals, and put it on the table. You will have a lot more success with him eating it.

And I also thank god I married a man who is mature enough to eat veggies! lol haha

Oh PS even though my husband is a veggie eater. He was scared of two veggies cause his mom is!!!!

We've been married 8 years now and he will eat anything I make!

Here's how he got over his fear of the two veggies-peas and spinach! I continued to eat them! I hear a lot of women say, oh I can't make that my husband won't eat it. SOOOOOOOOOOOO! I like it, and I'm going to have some food I like too! If he doesn't eat it...that's his choice! lol

Well, I kept making peas, and I kept making spinach. You know what, eventually he would try just a little bite, cause the aroma would entice him. And seeing me enjoy it!

Spinach is still not his favorite veggie, but he will eat it and likes it! (he just likes other veggies more, but still he likes spinach now!).

Peas, it's one of his favorite veggies now! And now he even orders them out to eat!

Both he was really really scared of when we first married.

It took about 6 months to get him over peas, and about 2 years to get over the fear of spinach! lol haha

Hey girls, dinner was a success! I baked it as Heather suggested. Then sauted two diced onions and five cloves of garlic in butter. I fluffed up the baked squash and put it in the pan with the onions and garlic. I then made a white sauce for over the top, I also cooked 3/4 a pound of shelled, deveined shrimp and through them in it too. Dh said it was very good even if it was made with squash :) The kids weren't having anything to do with it though, they chose to eat next door at their grandparents house.

Just keep serving it. And do NOT tell the children it's veggies!

Also don't give them alternatives.

I grew up loving veggies, but we didn't have a choice as to what we ate. We ate what mom cooked, or we didn't eat. We liked to not be hungry so we ate what mom cooked. lol

Heather, you're so funny! LOL. Usually the kids don't have a choice, but I decided to have a quiet dinner with my DH instead of listening to the kids complain. :) Since it went over so well with hubby I'll have to make room in the garden for some next year. Oh WOW ! its not even Oct. yet and already the plans have started for next years garden!

I was reading your message because I LOVE spaghetti squash. I cook it with just butter and salt or olive oil and salt, I am going to try a few of these recipes. BUT when I saw you were from Shinglehouse I had to comment, I am from Coudersport! How awesome to have a neighbor on the site!

As for growing it. You should it's so expensive. Yet, it stays good for a long time. Especially if you have a cool darker place to store it! (like a root cellar).

I've always had a good success in growing it. The only thing is if you live in a drought area. It doesn't harvest till late in the summer to early fall. (like right about now!) And if you live in a drought area August heat/dryness sometimes killed it.

I would also grow a few. As I never got many from each plant. But, I think again that went back to the drought issues where I lived.
