You know, I love cooking! I just hate thinking of what to make! What are you having tonight? Maybe some of your inspirations will help me and other cooks to figure out WHATS FOR SUPPER!! Keep this post ongoing so we will have many weeknight supper ideas to look forward to!

Just put some chicken in the crockpot before leaving for work. When I get home - all I have to do is make dumplings and my chicken and broth is ready. Chickens & Dumplings.....yummy!!

Threw together a quick soup with a couple of zucchini, potatoes, onions, chicken broth and lots of garlic. After it simmered, I put it in the blender to make a thick puree. Served it with quinoa and a bit of kielbasa. Easy and tasty!

We cheated and went to Crackerbarrel for dinner last night, but I have a roast in the crockpot for dinner tonight. I'll make some new potatoes and green beans to go with it, and have a blueberry pie for dessert.

Tonight we're having chicken fajitas with mexican rice. Homemade browines w/ vanilla icecream for dessert! I love fajitas, a meal in one pan!!

PIZZA! I haven't done this before but I want to start making pizza on Friday night from homemade dough and use what I have on hand for toppings...sort of like my scrambled eggs on Sunday...I clean out my frig....pizza is another great one to clean out the frig or use up fresh veggies before they spoil. Anyway...I'm trying it for the first time. Anyone have a good recipe for pizza dough?

I'm cooking a shrimp & Okra gumbo. Hubby cannot wait for cold weather to eat gumbo. So, gumbo it is! The okra is from my first garden.
