this was passed on to me many years ago and it really tastes like apple pie!!!
zucchini apple pie
6 cups zucchini...peel and cut lengthwise, remove seeds,cut in slices,cover with water and cook till tender. drain zucchini and place in cool water 5 minutes. drain throughly and add to other ingredients.
1 1/4 cup sugar 1 1/2 teaspoons cinnamon 2 Tablespoons flour 1 1/2 teaspoon cream of tartar 2 Tablespoons lemon juice dash of nutmeg place in 9" pie crust cover with second crust bake 400 for 40 to 50 minutes

I used to make a zucchini crisp which tasted exactly like apple crisp. Everybody loved it until dd spilled the beans and dh heard her say it was made with zucchini. Silly man, he loved it until he found out what was in it. Now he won't touch it!
