I decided that after my dd#2 wnt out to pick a bowlful of blackberries, I would make a cobbler. I was wonderful. Though two out of three kids weren't as impressed as dd#2 and I were. Very delicious out of the oven.

What are you favorite cobblers?

The simpler the better - mix the fruit with a bit of cornstarch, sugar as need (the less the better), put in a baking pan, and put dollops of Bisquik or similar mix on top, bake as per the instructions for bisquits on the box.

I'm partial to peach cobbler, probably because it's something tasty from my childhood. I haven't had a piece in ages! Maybe when the kids come to visit next time I'll make one. Doesn't make sense to do one just for me. But you got my taste buds flowing for one Sherrie!

apricot or peach are my favorite. I use a little tapioca for thickening in mine..just the quick kind, dry with the fruit and sugar and spices. Yum!! Made an apricot one not long ago. blackberry is wonderful too. I don't have access to cheap blackberries..my grandparents had them growing along the creek behind their house and I grew up eating them every which way. I miss that alot!!!

I have also used potato starch as a thickener for cobblers and pies it is great. There is also a product called Clearjel that is most highly recommended by the folks from Cooks Illustrated. Potato starch costs less and is easy to find at the health food stores...BTW potato starch is a good thing to add to bread doughs particularly when making rolls or buns :-)

We love cobblers and crisps. I think it is great fun to mix fruits when you don't have enough of one type. I've used peaches with blueberries and peaches with raspberries. In the winter i've used Granny Smith apples with a can of sour cherries...makes great pie too. Sometimes i even put some nuts in my cobblers :-)

Blackberries and apricots were on at the same time this summer and my friend brought me a blackberry/apricot cobbler! The colors were so beautiful together and the taste was out of this world.

I love all cobblers and crisps! Well, I just love food in general . . .

Right now I'm eating chocolate chips!

I have made one out of peaches and raspberries! Yummy like a peach melba especially if you add a dollop of vanilla icecream or frozen tofu.

My first attempt with a MJF Bake Over was with blueberrys, raspberrys and blackberrys with a johnnycake lid. My fiance love berrys. Supposed to serve four, but hot out of the oven, ha, you know the rest of the story.....

Yummy Dave, That is a combination we have often here in the summer. I have bushes of all those so pick a bowlful almost every day while they are on the vine. Great combo for a bake over.

Years ago when I was taking care of a an elderly female stroke patient in OH who had at one time been a blue ribbon winner at the county and state fairs in almost every category - one of my "challenges" was getting her to eat again. (her hubby's idea of a weekly menu was chicken noodle soup for lunch or chili for dinner or vice versa 7 days a week) I rolled her wheelchair to the kitchen, told her I'd be her hands and feet and do whatever she instructed if she'd teach me to make food she'd love and eat. She taught me SOOOOOOOOOOOOOOOOOOO much!! One of her best recipes was on a card that just said "DELICIOUS" at the top...my daughter and I now call it cobbler and have it as often as possible. I'll share it - she wouldn't mind, I'm sure. And it's sooooooooooo simple. Preheat oven to 350. Melt in a glass baking dish 1 stick of butter. In separate bowl combine 1 cup of self rising flour, 1 cup of sugar and 1 cup milk. Stir only until all ingredients are wet. Pour that mixture into melted butter - DO NOT STIR!!! On top of that dump enough canned fruit (we most often use drained sliced peaches but cherry pie filling is my fave) or prepared fruit to 3/4 cover surface - again DO NOT STIR - and bake for about 40 minutes. Should be golden brown on top. Best with a scoop of ice cream or my mom always served warm cobblers with a dollop or two of cream or milk.

This brings back memories! We used this recipe when we worked with the teen groups at church. We called it dump cake cause you just sort of dump the stuff on top of eachother and let the oven do the mixing.
The boys especially loved this recipe cause they could make it and it would be as good as the girls. One time we had a bakeoff with this. A really fun potluck.
One of the boys got the bright idea to use a cake mix. He melted the butter , dumped the dry cake mix on top ,poured the milk over that and then added the fruit. It came out wonderful.

sherrie .. my favorite cobblers are always the ones that i (or a loved one) picked the berries for! we grow blueberries and cherries here at the farm .. sooo .. those are my two favorites right now!

winter is upon us and i'm looking forward to these spring and summer treats already! frannie
