I just got back from picking up my CSA share, and boy are the carrots in abundance (and huge)! (I also get a chicken share as well as a "value package" of various cuts of beef and so I've finally plugged in the ol'chest freezer.) My question is what is the best way to prepare carrots for freezer storage? Must I blanche them prior to freezing, or can I just chop them up, throw them in the appropriate baggies and into the freezer?

If you cut off most of the top and just package the carrots in plastic with a couple vent holes, they will keep in the fridge or any cold place. My mother always did this and they lasted for moths.

Yes, you need to blanch them first. I just froze some the other day and if I recall you blanch them for 3 minutes.

Thanks everyone! I was just hoping to avoid blanching, as we are currently in the middle of major kitchen renovations, and there are too many to keep just in the fridge.

Laluna, if you have one of those plastic mesh bags like what onions or turkeys come in, it makes the whole process MUCH easier. I use those bags for peas, carrots, beans, etc. Cut them up and put them in the bag. If your water is boiling already, just drop the bag in the pot. After the 3 minutes, pull the bag and drop into a bowl of ice water. Then simply dump them into your freezer containers or freezer bags. Without those bags (I have several) it takes a lot of time to fish all the veggies out of the pot. It's a big time saver.
