Okay girls looks like I have got a long nights work so before I get plum cross eyed heres how to make it, Wash and sterlise qt jars, cut full corn off whole kernal, do not scrape cobb fill corn in jars 3/4 full , add 1 tsp canning salt, pour boiling water to the top, add lid do not seal, put jars in cool place let ferment at least 6 weeks, when ready to cook, rinse 3 or 4 times, put in pot with small amount of water and bacon grease, add a skillet of corn bread and you are ready to go, You will either love it or hate it

Yup, I've had those. I love green beans anyhow I've heard you can pickle baby potatoes but that does sound a tiny bit off putting to me... I'm going to try to sweet/tart pickle some of my little golden plums this year and see how they do. And we didn't get any corn in the ground this year, but I might just have to go buy a box of ears at the farmer's market and give it a try

Miss Wilma, this isn't my recipe, but it looks about right. I made some a few years ago, but now can't find that recipe. They are scrumptious and make wonderful Christmas gifts You can make a small batch this way and see how they turn out
Combine 5 cups sugar, 2 cups water, 1 cup vinegar, 12 inches stick cinnamon (broken), 2 tsp. whole cloves. Heat to boiling. Drop peaches (about 5 pounds) 3-4 at a time into boiling water. After one minute, place peach into cold (icy) water. Rub off skin gently. Remove pit. Keep as halves. Place fruit in boiling brine. Pack in hot sterilized jars; add hot syrup to ½ inch from top Seal. Hot water bath for 20 minutes. Recipe makes about 5-6 pints.
Wish I was there to help with the corn, work is made light when shared =) tell me how the peaches come out, or I'll tell you if I get to it first.

I cant believe it either, I look and feel like something the cats have drug in, I finally got it all cut and cooked at 4:10 this morning.I didnt mean to pull that much but the birds wanted my share and theirs to.I love pickled corn but my children hated for me to cook it

I can't wait till next year. I am going to have the BEST garden! It would be so much fun to pickle my own corn! Maybe I will have to buy some at the farmer's market to pickle just to make sure Doug and I both like it!
