I made great Home-made Black Bean Veggie Burgers tonight! They were awesome!! I won't be going back to pre-made store-bought veggie burgers (i.e. boca, morning star) again! Here's basically what I did (the recipe..lol) I sent this to my brother as he is a vegetarian
and this is a variation of the recipe .......

Ingredients -
1 can of black beans
Piece of onion (as much as you like - and I prefer red)
Salt/Pepper
1 egg
Tony Chachere's Cajun Seasoning
(or some sort of seasoning like this)
2 pieces of bread crumbled into bread crumbs
Oil (Olive or Canola or Vegetable)
Your griddle

- Heat up your griddle (to 375)

Drain black beans and wash them
Dry the beans as much as possible
Mash beans til' they look like refried beans
Chop up the onion
Add the onion to the beans
Crack egg in another bowl and add your spices,
wisk it up
Add egg mixture to bean-onion mixture
Make bread crumbs
Add bread crumbs to bean mixture
Mix this
take oil of your choice and oil your hands
Take the bean mixture and
make patties
put on the griddle
(you may add a little oil to the griddle if you like)
grill approximately 6-8 minutes per side

This makes approx. 4 black bean patties from ONE can!
CHEAP!

I added a hummus dip to the black bean mixture and
that gave it a great flavor. Get imaginative with it
and you might come up with some other kind. I also
put mustard, lettuce (all organic) and tomato and my homemade dried
basil to the burger ........ it was REALLY GOOD.
You can take the base black bean mixture and probably
mix it with something else. I read you can add brown
rice to the mixture as well...!

Brooke, thank you so much for sharing this recipe! I'm going vegetarian more and more, but I have to admit that sometimes a burger sounds sooo good. I wanted to buy veggie burgers, but I hadn't been able to find any organic ones (I'm sure there are some out there somewhere...). Homemade is sooooo much better though!! Do you know if these would freeze well?

I froze two of mine without precooking them and I know someone suggested doing this to keep them more "together". They did fine!Now.. they don't EXACTLY taste like meat but they are still REALLY good.. at least mine were, so I thought I'd share this! I hope yours comes out like mine did. Get creative too!! Don't be afriad to put in other things.. like garbanzo beans or sprouts or what not ....
