Here's a take on Shepherd's Pie with a healthier (vegetarian) twist that even my carnivores love! (I think this came from Country Living mag... It's a great way to use leftover veggies and mashed potatoes)

1-2 TBsp. olive oil
1 6 oz pkg. mixed mushrooms ,sliced
2 med. carrots, peeled and sliced
1 medium onion chopped
1 small green bell pepper, chopped
2 cloves garlic, chopped or minced
2 tsp. @ basil, oregano, thyme
salt and pepper to taste
1 med. zucchini, chunked
1 cup peas (fresh or frozen Preheat to 425.
1 c. water
1 TBsp flour
1/3-1/2 c. milk, warmed
1 c. shredded Monterey Jack cheese
1 1 1/2 lbs. peeled, cooked potatoes, mashed(about 6 potatoes)
In large skillet heat oil add mushrooms, carrots, onions, green pepper and garlic. Sautee until lightly browned, Stir in herbs and seasonings. In a small bowl combine water and flour until smooth. Stir into veggie skillet mixture and cook on low until thickened.Add zucchini chunks alonh with peas into skillet mix. Take mashed potatoes and whip in 1/3 c. milk and 1/2 c. cheese.
Place vegetable mixture into a 3 quart casserole dish. Spoon cheesy potatoes over to cover. Sprinkle with remaining cheese . Bake 15-20 minutes until nicely browned .

(I have added green chiles, corn and taco sesoning to this for Mexican Veggie Pie too!)

Thanks Bramble babe! I make the Shepards Pie with ground beef, but this looks even better! I get really tired of using hamburger.

Hey Farm Girls!!!

What a great recipe. I believe that even I, essentially a non-cook, could do this. I am looking for some relatively easy vegetarian recipes.
Just checked out a stack of books from the library yesterday.

I have a recipe for veg style shepards pie that everyone love also. I'll have to get it together and post it, I use lentals instead of meat. But this one from Bramble sounds delish.

That sounds delicious, Bramble. The proportions for the herbs, were they for fresh or dried herbs?

I believe the recipe listed dried but I cook with alot of fresh herbs so I usually improvise with them.

Right. You know when substituting fresh for dry, you're supposed to use triple the quantity, right?

I'm a tasting cook, so I usually add until I think it tastes right! Somewhere in the back of my adled brain I remember from 4-H Food Science double for fresh herbs, but I bet some people didn't! Thanks, Amanda!
