It's much too hot here to turn the oven on. Does anyone have some yummy dessert recipes that don't call for baking?

I believe several of the church cookbooks I own have some, Dawn. Like no bake cheesecakes, and icecream bombs, etc...some are more work than others. I'd be glad to look for you if you'd like...

Thanks Jonni, I'd appreciate that. Our central air died last night & it's going to be in the nineties this whole week. Simple recipes are what I'm looking for. Anything you feel like giving me will be much appreciated!

My mom used to make a great summer pie. One prepared pie crust (usually graham cracker or chocolate) topped with sherbet (lime was my fave), top that with hard shell and top THAT with cool whip. You could health it all up making your own crust, making your own chocolate sauce (it won't harden but that's alright) and your own cool whip. I'd have no idea how to make sherbet though. Anyway, let that set in the freezer for a while until the cool whip is firm and serve it up. Oh that's so refreshing! Around here we have pudding and fresh fruit for our desserts, it is too hot to bake! P~

Some ideas here...check out the web for specific recipes (try Taste of Home recipe archive).
1. No-Bake Cheesecake (already mentioned). Really good with fresh fruit! I like the classic Knox Gelatin recipe.
2. Jello! Or Chill-overs! SO refreshing when it's hot, especially made with real fruit juice.
3. Do you have a recipe for peanut butter balls or no-bake cookies? I can hunt some up if you're interested. Another treat is "Cow Pies"--melted Chocolate chips mixed with nuts, raisins, etc. and chilled to harden.
4. Homemade smoothies or Milkshakes. If you have a blender, these are quick, tasty, and nourishing.
5. Don't forget Ice cream, if you have an ice cream maker!

Wow Dawn, we just got thru with the same issue--I know your pain!! We did a lot of fresh fruit salads, ice cream, popsicles--stuff like that! Try allrecipes.com and see if they have anything.

Miriam, those Cow Pies sound intriguing along with any no bake cookie recipes you can share! Samantha, I'll check out the website. I had looked at Food TV Networks and the search engine gave me recipes that require an oven even though I specifically asked for "no bake".

Dawn, I've got a delicious no-bake cookie recipe (can you say chocolate and peanutbutter?!?)..... but I just have to find the recipe..... I'll see what I can do.....

ice cream pies - we love them. Get two oreo pie crusts. Buy 1 gallon of mint ice cream, or peppermint, or coffee.......let it melt to soft, and then spoon smoothly into the two crusts. Then freeze again. Yum Yum and oh so easy.
I did one last month using french vanilla ice cream, oreo crust, and then I put sugared blueberries on the top before freezing. The berries kind of sank into the top of the ice cream....it was good.

Here are a couple that I have, Dawn. My favorite first..
Marsala Cheese Tart 5 oz gingersnaps, broken into pieces 4 tblsp. unsalted butter melted 8 oz cream cheese, room temp (won't be hard with the air off :)) 1/2 cup sugar 2 tblsp. marsala wine 1 tsp pure vanilla extract 1/2 cup heavy cream
Process gingersnaps in food processor until finely ground. Transfer to bowl, add melted butter and stir until well combined. Transfer to 8 inch tart pan (with removable bottom) and press into bottom and up sides to form an even crust. Place in freezer.
With paddle attachment, mix cream cheese and sugar until fluffy. Add Marsala and vanilla and beat until combined. Whip heavy cream to stiff peaks and fold in. Spoon into crust, and return to freezer until firm. You can cut up oranges, or any of your favorite fruit--I will do small blood oranges.
Next:
Rasberry Cream Pie
6 oz ready Keeble graham cracker pie crust 1 14 oz can of sweetened condensed milk 2/3 cup frozen raspberry lemonade concentrate thawed 1 8 oz container whipped topping 1 cup fresh or froze raspberries
In large bowl combine condensed milk and juice concentrate. Mix well. Fold in whipped topping. Spoon 1/2 cup rasberries into bottom of crust and top with filling. Chill or freeze 6 hours. Top with remaining rasberries before serving
Next Lemon Ice
3/4 cup lemon juice 2/3 cup granulated sugar grated rind of two lemons pinch of salt 1 1/2 cups milk 1/2 cup cream
Mix lemon juice, sugar, grated rind and salt. Gradually stir into milk and cream. Freeze in ice cube tray until firm. Remove from tray and beat with electric mixer. Place into small dessert bowls and return to freezer. Top with raspberry sauce if desired.

I'm really thrilled with all this help. I'm printing every recipe and will be going to the grocery store tomorrow! I can't wait to start trying them out! The MJ Farmgirls are incredible!

I love the trifle my mum makes in summer.... bottom layer, cake and/or cookie crumbs, whatever is around. Then fresh fruit or even canned fruit, if for adults you can sprinkle with some liqueurs. Then topped with a layer of chocolate pudding. Whipped cream optional, if you want to go all the way you can top with ice cream. :) I love it because it is always a bit different since you can improvise. A favourite one was Black Forest- mum used chocolate cake, cherry pie filling and a chocolate pudding and lots of whipped cream.

Here's a recipe for "Cookie Salad" - not really a salad at all but a yummy, creamy and easy no-bake dessert:
INGREDIENTS 2 (3.4 ounce) packages instant vanilla pudding mix 2 cups buttermilk 12 ounces frozen whipped topping, thawed 1 (20 ounce) can pineapple chunks, drained 2 (11 ounce) cans mandarin oranges, drained 1/2 (11.5 ounce) package fudge stripe cookies DIRECTIONS In a large bowl, mix together the pudding mix and the buttermilk. Fold in the whipped topping. Mix in the pineapple chunks and mandarin oranges. Chill until ready to serve. Crush cookies and mix in just before serving.

Here's one I like - I can whip it up in no time:
12-16 oz any flavor yogurt (I use plain) small pkg of jello 8oz container of cool whip
You can dissolve the jello in 1/4 cup hot water but I don't - I just mix all together. You can mix and match the flavors of yogurt and jello - I like plain yogurt with strawberry-banana jello. Sometimes I put fruit in it, and if there is any left over I freeze in small containers and eat frozen! |

I also like pretzel salad..it's one of my FAVORITES...I'll try to find that recipe. It's a goodie :)

Ok, I found my favorite no-bake recipe. This is one that my best friend and I made when we would have sleepovers (sigh don't you miss those days?!).
Connie's No Bake Cookies
2 c. sugar 1/2 c. peanut butter (creamy or non your choice) 3 T. cocoa powder 1/4 t. vanilla 1/2 c. butter 3c. quick oats 1/2 c. milk
Mix together sugar and cocoa in a saucepan. Add butter and milk over medium high heat. Bring to a boil for one minute. Remove from heat. Add peanut butter and vanilla; mix well. Slowly add oats, make sure all oats are covered with chocolate mix. Drop by spoonfuls onto wax paper eat after cookies have hardened.

That's it, I'm going to have to make up a "Summer" recipe book! Makes sense to put all my grilling, salad and "No Bake" dessert recipes in one book by themselves!
