Just wondering if I can freeze okra and if so how? does it have to be cooked I really only like fried okra so I didnt know if it could be put up somehow so I can fry it later. Thanks Karen
If you freeze it - it will likely be too mushy to fry later after it has thawed. I would suggest frying it first then lay it on a baking sheet and freeze. When the pieces are frozen move them to freezer bags. Heat them up on a tray in the oven at a high heat when you are ready to eat them. Kind of like the frozen french fries you can buy. They should last a few months without getting freezer burn.
I do fry frozen okra. I have a heck of a time growing it here so it is the only way I can have my fried okra..and I MUST have my fried okra now and then!! I fry mine from sliced frozen okra. I think you could slice them and then flash freeze them on a cookie sheet like Julie said. When I use bags of the frozen okra I break it up by massaging the bag (still frozen) to get it in small pieces, then toss the okra peices (still frozen) in my breading (I use part flour, part cornmeal and lots of salt and pepper) and fry in an iron skillet in butter. It works well. I think keeping it frozen until it hits the pan helps alot. The flour mixture sticks to the frozen okra real well. I grew up eating fried sliced okra though. If you eat it whole I would for sure do it the way Julie described above. I have never had it whole. Hmmmmmmmm I will have to give that a try. IF my okra grows well this year...it is still tiny.
