I'm curious about the kind of dinners that you all rustle up in a week. What kinds of dishes to you go to for a standard family meal? In our house, spaghetti is always a hit (7 year old son) and baked chicken in a seasoning blend usually makes an appearance. But I'm looking for some other easy ideas.

We usually have spaghetti one day a week too. Easy & everyone loves it.

Another meal we like to make a lot but not weekly is something we call bread roll. To make it we buy a bread mix (though you could use your favorite recipe for a loaf). Brown 1lb of ground beef with onion. While the meat is browning, make the mix according to package. Once the meat is brown, drain, add a can of tomato paste, a can of undrained mushrooms, and a tsp of italian seasoning and garlic powder. Roll out the bread to a rectangle. Put meat down center, put sliced cheese on top, and fold bread over meat and seal. Cut a few slices in top to vent. Brush with egg wash & bake until bread is browned on top. Cut into slices & serve. We have also made these into individual loaves & that works well too. Not a lot of time to make but everyone loves it.

Some days we'll just have sandwiches, quesadillas, or something in the crock pot. Somedays its just too hot to cook!

Winter foods are pretty different from summer dinners. I use my crockpot a lot in the winter cause I can throw stuff in before work and have it ready when we get home before evening activities/homework and what-not. Also, I have a little one really leaning towards becoming a vegetarian...so if it's pork chops, better be something else along for the ride to feed him. His fav is mac-n-cheese. Spaghetti/lasagne also work well for us. Taco night is always easy. Oh...and I make a mean vege minestrone soup too. I occasionally like to do a breakfast-for-dinner every so often too. I also like to give my teen a night to cook too. Grape tomatoes and baby carrots are always around. Unfortunately, I'm not a very good "meal planner"....that's something that I really need to do better at. I barely got through one week in the early spring sticking to the "weekly menu plan"...so I'll be checking back to read what you all are doing as well!!! Thanks CherryPie for this post!

oh I can't believe I left off tacos!!!! We have the traditional ground beef hard shells quite a bit. Everyonce in a while I will roast a whole chicken. I will season the leftovers for chicken fajitas with peppers and onions and a homemade chimichurri sauce!

Yeah, I completely forgot that we have "tossed taco" quite often. Basically a taco salad with fritos instead of corn chips. Serious comfort food and not too terribly unhealthy because we used ground turkey instead of beef and we keep the fritos few per salad.

We eat seasonally. Since we got lots of grapes and cherry tomatoes this week we have been eating lots of those with chips and homemade salsa. I have been making jeff a stir fry of zucchini, mushrooms, green beans, and serrano peppers. I serve this over eggs or turkey burgers. We eat a lot of chili with chips to dip- but we are over loaded with tortilla chips right now. One week we got 4 cases of corn on the cob- the kids ran around with raw corn on the cobs- just chowing down for many days. We eat very simply. winter time will see more spagetti, stew, soups etc... and we love taco salad

We get our meat from our animals here on the farm so it all depends what I have in the freezer and what fruits/veggies are in season. We do alot of salads, tonight we had chicken fried steak/rice and beans. WE love taco salad here, spaghetti is a good one, chicken sandwiches, mac and cheese with ham, ham and beans, chicken and noodles.

I was just thinking about a post like this...I seem to be in a rut with planning dinner! Tonight was grilled chicken, grilled summer veggies and sliced tomatoes followed by watermelon...but Sunday dinners are always a biggie!

Usually chicken and rice pops up, along with taco salad, homemade pizzas--stuff that is easy and can be homemade. Son really likes it when we do Pigs in a Blanket or homemade corn dogs...So easy!

This is our menu for week coming up (Monday thru Sunday)
Mon..Steak Kabobs on the grill with rice and applesauce
Tues....Blueberry pancakes with scrambled eggs and melon
Weds..Chicken enchiladas with green salad
Thurs...Hot dogs over the fire pit (we are backyard camping that night)with green salad and chips
Friday...meatballs and rice with corn on the cob and home canned peaches
Sat...Chicken ala King over bisquits with fried okra and fresh fruit salad
Sunday ..gone camping...bringing fried chicken, potato salad and carrot and celery stix and rolls
Mon....still camping...bbq burgers and hobo packet veggies on the grill and watermelon
This is a pretty usual summertime weekly menu. I am not organized about some things but I AM organized about meal planning. I should be more flexible but it makes me sorta cranky when I have to change my menu!! Silly, I know. My favorite meal this last week was chef salads with some home canned chicken chunks and lots of fresh veggies. I can hardly wait for tomatoes to be ripe here...cottage cheese and tomatoes for me lotsa nights. The others want more than that but not me!!

Typical weekly meals 'round here:
Pasta (varies seasonally)
Chicken with rice/potatoes and veg (use different marinades and seasonings)
pork chops
Stir fry!
Soup/stew(winter), salads/sandwiches (summer)
Breakfast for dinner (usually pancakes)
Chicken/turkey burgers, sausage on a bun

Summer meals around here often depend on what's coming out of the garden or to be had at the fruit stand/farmers' market.

This week we are having ~

Monday (tonight) fried chicken, mashed potatoes & gravy, fresh green beans, etc. (this was yesterday's menu, but got bumped due to too much going on).

Tuesday - I always cook beans on Tuesday & it is usually our meatless night - we'll have cornbread (or Mexican cornbread), fresh veggies and mac & cheese or nachos (because some of us don't eat beans). I also usually bake something on Tuesdays - chocolate cake, peach cobbler.

Wednesday - fajitas or tacos with beans

Thursday - something with ground beef - meatloaf, goulash, Spanish rice, or hamburger steak

Friday - is usually homemade pizza, hot dogs or hamburgers

Saturday - if the weather nice, we usually cookout (ribs, chops or steaks), grilled veggies, corn on the cob & usually have a cold dessert - chocolate delight, strawberry shortcake or homemade ice cream ~ if the weather turns nasty, it is usually spaghetti or something similar.

Sunday - is usually either roast or chicken with the trimmings, fried okra or squash, sliced tomatoes

Other favorites for dinner - chicken fried steak, beef or buffalo stir fry, bbq sandwiches, chicken fajitas, salmon patties, hot beef sandwiches (from the leftover roast).

I try to cook less pork, but sometimes that is difficult - especially since we raise our own.
My favorite quick meal during the summer is blt's, tuna salad or chicken salad. (During the winter it is taco salad or frito-chili pies). Also during the winter we have more Mexican casseroles, homemade soups, chicken & dumplings, chicken & dressing, etc.

We make homemade salsa and usually have chips, along with baby carrots, cucumbers, grape tomatoes. My kids won't eat salad, but will clean up a fresh vegetable plate. I also try to keep watermelon and cantaloupe ready during the summer and we eat alot of fresh blackberries and peaches.

Farmgirls don't have hot flashes ~ They have power surges!

we usually have a lot of fresh seasonal stuff but these are someof our favorites....
panzanella salads in the summer~salad with lots of bread in it!
taco fixins in indian fry bread
spaghetti
BLT sandwiches
talapia with a pineapple & mango chutney
mixed meat meatloaf with twice baked potatoes on top the last 20 min.
roast chicken~I usually do two at the same time so I can use the extra one in meals.
Chicken enchilada's
Salmon Wellington

Once the garden comes in we have tons of salsa, tomatoes with fresh mozzerella drizzled with balsamic vinigar, fried zuchinni, stuffed zuchini, mousaka, etc.

I wish I could have fish ever week again. It would be a waste though, NO ONE ELSE EATS FISH BUT ME!!! grrr

If you want something simple and a little different Turkey- noodle parmesan is really good
3 cups of dry medium egg noodles
1 can cream of chicken soup
1/2 cup milk
1/3 cup grated parmesan cheese
1/8tsp black pepper
2cups cooked turkey or chicken (cubed)
Cook noodles according to package. Drain In same sauce pan combine milk,cheese and pepper;add noodles and turkey. Over low heat,heat through,stirring occasionally. About 10 min. When done sprinkle with parsley and parmesan cheese; garnish with onion srips, if desired.
This is really good. I got it out of the Campbells No-Time-To-Cook receipe book. It has alot of quick and easy dinners. Karen

Karen that receipe sounds good, I am going to try that. Sample of my meals consist of (main dish) fried chicken, beef stew, roast, meatloaf, fish and sometimes a steak. We have different veggies - salad....and hubbys favorite "homemade biscuits". I also like oyster stew every now and then and also homemade soup. I make a great Mexican casserole and everyone loves it.

Jamie, I hear ya...I'm the only one in my house who likes fish and man I miss it sometimes but I'm not going to cook two meals.
We have:
tacos
homemade pizza - usually vegetable -
burgers/sandwiches
casserole of some sort
sausage, bread and cheese (I run an imported cheese and bakery department in an organic food store so I usually have lots of cheese samples and organic, artisan bread)
then two nights that are more seasonally oriented.
We have been trying to shop as much as possible at the farmers market so last week we used some beautiful organic spinach to make homemade canelloni in crepes.
In the winter soup and a bakeover are on the menu once a week too, as well as pasta of some sort.

I do love to cook, but just seem to "wing it" every night. Do you find it easier if you have a menu planned? when do you plan your menu?
