I'm making a recipe right now for pulled pork that is North Carolina style. Can anyone tell me what makes it NC style? The sauce for cooking the pork was simple - catsup, cider vinegar, spices and water. Just wondering what makes it NC rather than any other type of pulled pork.

I would say the vinegar. Eastern NC bbq is always served with a vinegar based sauce. I live in the Western mountains and we use more of a sweet ketchup based sauce. Hope that helps.
