It's blueberry season here in my neck of the woods and we've been picking. They are now all frozen just waiting for me to decide what to make with them.
What's your favorite food made with blueberries?

Yum...blueberries..I havn't found any growing here...but I know they can...I tend to pay the price and get them anyhow. Last time I went to Costco they had beautiful organic ones and I splurged..they were worth it!

Oh my gosh...lucky you Debra!! wow!! I think I would just cry from happiness..haha I remember picking wild blueberries in Minnesota years ago when my oldest two boys were babies and loving the bounty..I froze them, canned them, you name it...and made a beautiful blueberry pie, which my oldest son, who was 2 and 1/2 at the time got up in the middle of the table and ate with his hands while I was changing his baby brother's diaper. Man!! Anyway...lucky you!!!!!!

One of my favorite blueberry recipes is Ellie Krieger's Blueberry Blast Smoothie: 1/2 cup milk, fat free or 1% 1/2 cup yogurt, fat free plain 1 cup blueberries, individually frozen, unsweetened 1 teaspoon honey Put all ingredients into a blender and process until smooth.
It is good anytime of day.

I miss blueberries. Worked on a farm in Vermont and we had them. My brother orders a large box every year and freezes them. When I can get them, I freeze them for smoothies. I don't bake much, just being me, but I have made jam before. I love jam!

| I am in the middle of picking blueberries and blackberries, wow, I can hardly keep up. I am freezing as last year I made tons of jams and we just don't get that much jam anymore and gave lots away as gifts. This year freezing more so I can enjoy this blue/black gold all winter. |

Strawberries are finished here and the raspberries are being cooked in this heat, so they are gone for now. Will wait for the second batch to come on in the cooler weather and make some jelly with them. I, too, love blueberries. They seem so exotic to me. I just love a good blueberry pie warm from the oven with a dollop of ice cream on top. Cherries are on here, but I've been looking for sour cherries because I would love to have a cherry pie--haven't had a good one in a long time.
The heat is miserable and it is supposed to be over 101 today. Will be glad when it cools down to the 90's.

I do feel very blessed! every week or 2 we have been getting $500 to $1000 worth of produce and tortilla chips. My freezer is almost full and I have been canning, dehydrating. We eat as much as we can fresh..

My mother used to make a blueberry pudding that was great.
EP's Blueberry Pudding
1 quart of Maine blueberries (the teeny ones) six or eight pieces of a nice white bread that has a texture to it, my mom always used Pepperidge Farm, but homemade would be fabulous sugar to taste butter.
First, rinse the blueberries off, put in a pan with a cup of sugar and start cooking them down over low heat.
Butter the bread slices (my mother cut off the crusts, not neccessary) Pile the slices up and cut into little squares.
Put the bread bits in a nice big bowl and when the blueberries are cooked a bit , mix them into the bread bits, and refrigerate for several hours. Serve with real whipped cream. It;is so easy to make and very tasty.

I found this Blueberry Pound Cake recipe years ago. It is really delicious and if you have a Bundt pan, that will work as well:
2 cups granulated sugar 1/2 cup butter 4 oz. (equal to half a block) cream cheese, softened 3 large eggs 1 large egg white 3 cups all-purpose flour, divided 2 cups fresh or frozen blueberries 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 (8-ounce) carton lemon yogurt 2 teaspoons vanilla extract Cooking spray 1/2 cup powdered sugar 4 teaspoons lemon juice
Preheat oven to 350°. Beat first 3 ingredients at medium speed of a mixer until well-blended (about 5 minutes). Add eggs and egg white, 1 at a time, beating well after each addition. Lightly spoon flour into dry measuring cups; level with a knife. Combine 2 tablespoons flour and blueberries in a small bowl, and toss well. Combine remaining flour, baking powder, baking soda, and salt. Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture. Fold in blueberry mixture and vanilla; pour cake batter into a 10-inch tube pan coated with cooking spray. Bake at 350° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
Cool cake in pan 10 minutes; remove from pan. Combine powdered sugar and lemon juice in a small bowl; drizzle over warm cake. Cut with a serrated knife.
I don't see why one couldn't use MaryJane's baking mix with this recipe - just substitute the flour, levening and salt for the same amount of Budget Mix.
Happy Baking! Jody

My very favorite thing to do with blueberries is to eat them frozen, one by one. Since we don't grow them around here I have to pick mine at Trader Joe's. Next favorite is blueberry muffins.

| hi julie, i wish you could taste our wild blueberries here in alaska your idea of blueberries having little flavor would defiantely change! the flavor bursts in your mouth and is almost overpowering! i make jam that is so rich you only use a tiny bit. and when putting them in pancakes i only use just a few per or that is all you taste! our cranberries are the same way. they are both very tiny, about the size of a current or smaller but the flavor is indescribable! guess i am gonna have to go slice some homemade bread and have some jam lol. my cranberry sauce is so rich you use like a tablespoonfull with your meal instead of a slice! i put it in tiny jelly jars that work for several meals! peace connie in alaska |

A girlfriend and her family came over for dinner tonight and she brought a fresh blueberry pie for dessert. She had just picked the blueberries this morning and the pie was to die for. Now I'm going to have to pick some more blueberries so I can make a pie.

Oh I just found this thread again and thank you all for the recipes. they sound yummy! Dh brought home 13 qts of blueberries today. They were all in a big box so we put them in qt. containers to see how much there was. He bought them since we haven't had much time to do any picking recently. He also got some peaches. We won't do anything but eat the peaches. They are clingstone and I prefer using freestone when canning or freezing. Much easier to work with.
