We have been blessed almost weekly with free produce that a local grocery store gave to a friend who has pigs. he gives to all of his friends anything that isn't spoiled. I have canned lots of salsa, have a freezer of blueberries, corn on the cob, sweet potato puree.. and have 40 something cases of tortilla chips.
Yesterday I got about 70 lbs of tomatillas- will make salsa today, 41 cases of mango (will eat fresh in smoothies- as much as we can and the rest is getting frozen in batches on trays then will get put into freezer bags) 2 cases of poblano peppers and 1 case of cabbage that will get cut up and frozen for stew and soup in the fall.
We are totally blessed!

What a great thing, Debra! It's amazing what a little farmgirl know how can do, right? It sounds like you're making wonderful use of these items...and how nice of that grocery to give to that farmer. Farm animals are sure suffering in this economy, too. Good job!!!

It is a blessing indeed. I am so thankful that I have friends who taught me to can and preserve food. Otherwise we wouldn't have been able to take full advantage of this blessing. You can take as much as you want if you can truly do something with it. We were given 3 plastic grocery bags of tomatillos.. when we went to the ranch to pick up the rest I brought our friend a couple of jars of salsa from the tomatoes I had gotten a couple of weeks ago. I told him I was making tomatillo salsa tomorrow- he handed me another large box of them! yay!
I better go start cutting up mangos..

Oh my.. I got 1/3 of the mangos cut, and a dozen qts of the salsa canned. Tomorrow I will get the rest of the tomatillos. Should get at least 18 qts of salsa tomorrow.
I am beat today though..
I love sharing my salsa with others!

We ended it up with 34 qts of tomatillo salsa. I got 33 cases of the mangos cut up and either eaten fresh or frozen. half of the poblanos are in the dehydrator. will get the rest in tomorrow.

Hubby is getting chinese food for dinner. I am bushed.. The salsa is tart and spicy. just the way I like it. I used a combo of habanero, serrano and jalepeno peppers. I thought too that tomorrow I would dice up some mangos and pour some of the salsa over it- make a mango/tomatilla salsa.. yum..

Thank you.. It has been a long weekend but it is pretty much all done. We have 8 cases of the mangos left but I am sure we will eat those fresh.. can't tell you how good green smoothies are that have a ton of fresh mangos in them.. oh my! So good and refreshing.. todays has parsley, mangos and bananas. yum..
I got all of the poblanos in the dehydrator. all this is left is chopping up about 10 heads of cabbage and putting in the freezer for soups this winter.
Might be another delivery on Friday so I have to get this done and the house clean- we are packing for a move as well..

Tomatillo salsa
5.5 cups of chopped tomatillos (I pureed them in the food processor)
1 cup chopped onion
chopped garlic to taste (we love it so I always use way more- but start with 4 cloves)
1 cup vinegar
1/4 cup lime juice
chopped cilantro to taste (could be 2 tbsps to 1 whole bunch- we use one bunch)
salt to taste
chopped chili peppers (jalepenos, seranno, habenero- whatever you like- as much or as little as you like)
put in pot, allow to come to a boil and simmer for 10 minutes. Taste it when hot to see if you need to adjust the seasoning- but I am of the belief if it tastes great fresh it will be great when canned.
Ladle into pint jars and process for 15 minutes.. this gets about 4 to 6 pints- can't remember.

wohoo!.. I love canning. glad to hear that the grocery is sharing. What a wonderful thing. I took a chicken I had in the freezer for several months and made chicken and rice soup. Instant meals when the days have stretched into long ones. I also did a three bean chili. I can't wait to try your tomatilla salsa recipe. thanks for sharing.

that is the cooking time. once you put your jars in the water- and the water comes back to a boil then you let it process (or cook) for 15 minutes. 20 minutes for qt jars.

debra that is such a great thing for you and all those you share with! our gorcery stores here wont even give you what they are throwing out for the pigs! they are too afraid of lawsuits *sigh* sad isnt it? have you ever tried frozen cantelope? hubby brought home 6-8 bushels of overripe melons, years ago when he worked a farm in michigan, and i just used a melon baller and froze them! what a wonderful treat for the dead of winter. just remember to eat them still partially frozen or they get mushy. peace connie in alaska
