Hey ya'll, I have zuccinni growing out my ears! I am looking for some good, easy recipes that even the kids would like! Breads, casseroles etc... Any ideas?? Thanks!
I don't grow any, myself-- I don't have to, 'cuz the neighbors do! ;) Besides the stand-by zuccinni bread from the Betty Crocker book, my kiddos like them cut into 'fingers'. I salt them just a bit and put them in the oven to soften them a tad.
Hey Kelly, If you want to send me your address I will send you some - I have recipes for zucchini chocolate cake, zucchini soup, zucchini coconut bread and a dish called zucchini florentine that my grandma used to make. All of them have passed the 15-year-old-boy-who-doesn't-like-vegetables test. They are all pretty fast and easy too - I don't have a lot of extra time Amy Grace
Kelly, here is a link to another post about what to do with too many zucchinis. I was keeping it in the back of my mind so I could use it when I am overrun with them this summer. It looks like your garden beat me, though! Good luck and let us know what you try!
