so i did it! i canned my first pickles. it was fun, and i think more difficult than jam, but i loved it! i posted all about it on my blog.

Amy, your pickles look yummy. Since I'm alone, I haven't made any for the longest time. I have a 7-day pickle recipe that is absolutely delicious. It gets a little stinky in the house while making them, but if you have a porch to set them on, all the better. They are really good. A farmgirl neighbor of mine gave me the recipe. She was a really good cook and canner.

My first attempt this year will be strawberry jam. Will pick the berries tomorrow afternoon after my doctor's appointment.

Amy, I made refridgerator pickles 8 gallons worth! I didn't have any canning jars when I made them. They were easy- just vinegar, salt, sugar, celery seed, onions, bell pepper, garlic, red pepper flakes and the cukes. they are so good!
I just got through canning 34 qts and 24 pints of salsa- then 10 more gallon bags of crushed tomatoes.
I need more canning jars..

rene - i agree. i grew up on home canned pickles and jelly. and my family put up all our own vegetables.

debra - wow! you are a busy woman! i would love a salsa recipe for canning.
