Does anybody have a really great recipe for pickled asparagus? I've checked allrecipes.com already and I'm not sure I like the ones that are there.

Marcia-who has 50# of asparagus to pickle and freeze

Lucky you...I LOVE asparagus. I have only pickled it once a long time ago..never get enough at any one time to do a bunch that way...I use a dilly bean recipe...I liked the brine it used. If you don't find one you like, let me know and I will give you the recipe I like for dilly beans...then you just use the asparagus instead. They arn't a sweetish type though, if that is what you are looking for.

Thanks Jenny. I did finally find a couple of recipes that look good. I make dilly beans too and love them. We're doing part of them with that recipe and part with another recipe I found that looks sweet-hot.

Someone called me during the part of the Martha Stewart show yesterday that featured the pickle guy. I was really looking forward to it. I don't like asparagus cooked I wonder if I would like it pickled? I would love the dilly bean recipe! Thanks.

We did three different kinds of pickled asparagus.

This is the one I like to use:

SPICY DILLY BEANS
5 lb. fresh green beans, rinsed and trimmed
6 c. water
1 c. pickling salt
6 c. vinegar
1/2 cup pickling spices
1/2 cup mustard seed
8 dried red chile peppers
16 cloves garlic, peeled but whole
1 tsp alum powder

Into each of 8 pint jars put one head of fresh dill (or a generous sprig of dill weed fresh), 1 Tbsp pickling spices, 1 Tbsp mustard seed, 1 dry pepper, and two of the garlic cloves and 1/8 tsp alum. Pack the beans in the herbs standing upright tightly (they look so pretty this way) and then ladle the hot brine over them, leaving 1/2" of head space. Seal the jars and process in a hot water bath canner for 6 minutes. They are best after 2 weeks in the jars...and wonderful cold!!!

Thank you Aunt Jenny! They sound WONDERFUL!! I have one question though-- is it just a regular "water bath," or do you use a pressure canner? 'Cause I don't have one of those anymore! (I think hubby blew it up!!)

Here's mine....and it's different from Jenny's

Pickled Dilled Beans

2 pounds green beans--whatever that is. I just start filling jars and double or triple the brine.

1 C. white vinegar
3 C. water
2 Tablespoons pickling salt
2 teaspoons dill weed or dill seed
1/4 teaspoon cayenne pepper
2 cloves garlic, crushed

Place the above ingredients in a saucepan and heat to a boil. Into each pint jar put 1 or 2 dried hot chilis, 1-2 cloves of garlic and a few sprigs of fresh dill. Pack the jars with the green beans. Pack them tightly, standing on end and trimmed to fit the jar. I agree with Jenny, they look so pretty that way. Cover beans with hot pickling liquid, leaving 1/2" headspace. Process in waterbath for 5 minutes.

This is also one of the recipes we used for the asparagus.

The other pickled asparagus recipe I used. I haven't tasted these yet but they sounded so good.

Makes 5, 12 oz. jars. Into each jar put:
1 clove garlic
3 allspice berries
6 black peppercorns
4 coriander seeds
1 small piece of mace, or nutmeg
1/2 t. hot pepper flakes(optional)

Pack jars with asparagus, trimmed to fit the jars, tips up or down

2 1/2 C. white vinegar
2 1/2 C. water
2 1/2 teaspoons pickling salt
2 Tablespoons sugar

Heat the vinegar, water salt and sugar in a saucepan until they boil. Pour over asparagus and process in a waterbath for 5 minutes.

Wait 3 weeks before eating.

Just waterbath is enough for pickled things. Nice huh???????
I will have to try the other recipes too...I am anxious to try the spices in the second one especially...yum!!...now to find some asparagus!!!!
