Cute. I love that!
I always build fantastic salads because I am picky! I despise iceberg lettuce so I never use it. It has little or no nutrition and it's hard to digest.
I use Feta crumbles (usually my own homemade), and I love to keep a jar of "crisps" to shake out over the top of our salads in addition to grape tomoatoes and avacados diced up.
Crisps: I soak raw pumpkin seeds and pecans in water with sea salt for 24 hours. I rinse them and then spread them out on baking sheets and sprinkle with sea salt and cayenne pepper and dehydrate in the oven.
