Help Please! Need to make a salad for dinner and to lazy to go to the market. So I have canned sliced potatoes. Has any one used them to make a potato salad before? If so do you have a recipe? I also have a bunch of canned beans. Anyone have a recipe for a bean salad? Thanks.

This is a hearty salad I make a lot when Albacore tuna is on sale, using new red potatoes. But I bet the canned potatoes would substute just fine. It's very much kitchen-sink salad, so exact measurements are not crucial:

1 6 oz can Albacore tuna, drained.
1/2 can chickpeas, drained and and rinsed
2 big handfuls green beans, blanched for 1 minute then cooled in ice water
1 can potatoes, drained (or 8-10 new red potatoes, halved, boiled and cooled in ice water)
2 tbsp olive oil
1 tbsp lemon juice
salt and pepper to taste

Toss all in a big bowl. Good served ar room temperature or chilled.
