I love this recipe, and make it all the time. It tastes better the next day, and is even good cold. (But I prefer it warm)

Faki

1 lb dried lentils (any kind except french because they cook up and turn into soup)
1 large can of whole plum tomatoes
1 small can of tomato paste
1 large yellow onion
2 cloves of minced garlic
salt to taste
fresh ground black pepper to taste
2 stalks of celery cut in 1/4 inch pieces
handful of fresh basil
2 teaspoons of white vinegar

Throw everything in a stockpot at once and cook over medium to low heat for 1 1/12 to 2 hours, tasting until ingredients have cooked together. Adjust seasoning to taste. That's it.

Thanks , this sounds good and I will make it this weekend. Dh is a big fan of lentil soup so he will be grateful ( anf full! ) I hope!

If he is a bigger eater, double the recipe, or you can even triple it. Faki lasts forever in the fridge, and it is a great snack to grab on the go. It isn't fattening either.

Hope he enjoys it!!

I tried this recipe yesterday...it was sooooo good! I also added chopped walnuts and kale (two "superfoods"). If you're looking for something easy and healthy that warms the tummy and soul, try Diane's tried and true recipe. Diane, or anybody else, where did the name "Faki" come from? I have never heard that name before.
