I had two chicken breasts that needed cooked so I cubed the meat and browned it in a cast iron pan while I made some yummy basmati rice (yum!!!) I then put the hot chicken in with the rice, added some frozen peas and broccoli, added the "de-glazing" water from the the cast iron, a packet of ranch dressing mix and about a half cup of sour cream. I mixed it together and it made this wonderfully creamy yet tangy sauce. The chicken has a nice flavor with the browning and the veggies are always nice. Yum! Nora is actually eating her veggies tonight and though I don't want to get her hooked on the need for a flavoring for veggies- it is good that she is eating them during this picky toddler stage. And I think the meal probably cost maybe $4 to make and it's enough to feed a big family. I ate one bowlful and am stuffed. I would bet it would feed a family of 6 easily- maybe more if you had other fruits and veggies with it.

One really great alternative is, instead of ranch dressing, use taco seasoning. Bo loves it, and requests it often. Getting him to pick something for dinner is like pulling teeth, so it's a surefire hit with picky eaters, too.
