I made halibut tonight, with a pineapple mango jalapeno salsa, and there's quite a bit left...normally I'm good at food ideas but for some reason....

Any suggestions?

a fruity salsa is really yummy on ice cream...try it really! the differences in flavors and textures is to die for! also it can add a nice zing to a salad or a fruit salad or just nicely with some blue corn tortilla chips! Pringles makes those yummy new bistro chips and fruit salsa goes great with the sweet potato chips...or you could make your own sweet potato and cinnamon chips for the salsa!! MMMMMM

Thanks, Tasha...I wondered about just with chips...I have some Garden of Eatin' Flax Seed and Sea Salt, so I may take that for lunch tomorrow :) On ice cream sounds good...I have a good vanilla bean up there--nice spicy sweet combo :)

I used to dress up omelets with fruit salsa, and potato pancakes. Ahh, those were the days...when I had a metabolism! :D

Sounds good, all. C'mon over, Jenny--there's plenty!!! It really was very good and made the fish just wonderful. Nothing like a real simple spring dish to get me going!
We also had steamed asparagus with lemon butter, and boiled new potatoes with butter and parsley.
