Tonight I made my very first MJ bakeover with the Shepherd's Pan Bread mix. Last weekend I found a great pan to use that can go in the oven. I used just a little organic chicken and chicken Italian sausage, mixed with sauteed sliced Brussel sprouts, chopped onion, finely diced bit of turnip, a sprinkling of sun-dried tomato bits, a sprinkling of parmesan cheese. It was fun to make and delicious. I can't wait to order more mixes and try more bake-overs. It has been months since I first read about bakeovers in my first MJ magazine ... so tonight's meal was a long-awaited treat. ![](icons/icon_smile.gif)

Jana- That sounds yummy!! I love bakeovers- you can stuff a whole lot of goodness into them. Glad yours was a success!!
What area of Decatur are you in? I'm a hop-skip-and a jump from there.

Jana, congrats on your first bakeover! I liked everything in your recipe except the brussel sprouts -- bleeeechhh! The bakeovers are great, and so versatile. Easy to use up little bits of "this and that" leftovers, too!

Hi Karin, I'm south of the downtown square by about ten blocks, south of Agnes Scott College. Where my street ends is the border of DeKalb and Fulton counties. I've not heard of Ellenwood. I have kin out near Athens in Bishop, GA --- are you near there? I'll have to get out my Atlas.
Jo, Yes, I can see that bake-overs are going to be great for leftovers. I like one-pan dishes made with "this and that." I knew when I mentioned the Brussel sprouts, someone was going to make a face. (LOL) I think next time I'll try fresh spinach. This weekend, I bought some organic feta cheese to put in my next bake-over and have some fresh sweet potatoes to add, too.

I love BakeOvers! They saved my life when I was first married. DH and I were so poor - we could hardly afford any food! Those BakeOvers were so filling and comforting. I usually made them with with the cheapest veggies around - carrots, celery, and onions; lots of spices, and chicken. I poured a little gravy on them and it was truly food for the soul. Now that we're in the big bucks (HA!) we can make them with better ingredients on top, but I will always remember my first BakeOvers with fondness ![](icons/icon_smile.gif) |
