Anyone have a delicious tomato soup recipe you'd like to share? It would be much appreciated!!!

Well, I use this one a lot--it's from a cookbook comprised of award winning State and County Fair recipes. This one won 1st place in the Toppsfield, Mass Fair.
It's very complex in flavor and smells sooo good cooking!
1tbls olive oil 1 cup finely chopped onion 5 garlic cloves, finely chopped 5 cups vege stock, divided 1 1/2 tsp oregano (I use fresh) 1 1/2 tsp dried tarragon (which I omit--I just hate tarragon,can't help it :)) 1 1/2 tsp dried basil 1/2 tsp black pepper 1/2 cup red wine 1 can (28 oz) chopped tomatoes (I use Muir Glen) 1 can (6 oz) tomato paste (also Muir Glen) 2 pkgs of frozen spinach, don't thaw--could also use fresh if wilted before hand 1 tlbsp balsamic vinegar 2 tblsp parmesan
heat olive oil, add onion and garlic, saute until soft and golden add 1/2 cup of stock; stir in spices and red wine and bring to simmer. add remaining stock, tomatoes, paste and spinach. Bring to boil and reduce to a simmer. Simmer until spinach is cooked through and flavors are blended, about 25 mins. Stir in balsamic vinegar; serve and garnish with parmesan.
Makes 2 1/2 to 3 quarts. Freezes well.
Let me know if you give it a shot--it's a yummy and beautifully colored soup!

Oh my Jonni...my mouth is watering just reading that one!! I am going to have to make it for sure. I have everything on hand but the spinach..but I know where to get some...yum!!!

Jenny, it's so good! I've been so pleased with this cookbook...I figure, if they win at state and county fairs, then I'm gonna like the food for sure!!!! This recipe is very easy and I think it's really robust, combining the wine and the balsamic vinegar. Such a great sweet flavor. Let me know what you think, Jenny :)

Yay!! Just what I was looking for :) I can't wait to make it, I am off work tomorrow and like to dedicate those days to cooking up lotsa yummy food :) THANK YOU!

The Pioneer Woman just did a terrific tomato soup recipe:
Sherried Tomato Soup
6 tablespoons melted butter 1 medium onion, diced 1 46-ounce bottle or can tomato juice 2 14 ounce cans diced tomatoes 1 to 3 tablespoons chicken base 3 to 6 tablespoons sugar Pinch of salt Black Pepper 1 cup cooking sherry 1 1/2 cups heavy cream chopped fresh parsley chopped fresh basil
Saute diced onions in butter until transluscent. Add canned tomatoes. Add tomato juice, sugar, pinch of salt, and black pepper and stir. Bring to a near boil, then turn off heat. Add in sherry and cream and stir. Add in parsley and basil to taste, adjust other seasoning, and serve with yummy, crusty bread on a cold, blustery, dreary, depressing, rainy, snowy day. Then close your eyes. And give thanks for soups like this.
