I am in love with black beans and Doug and I always love a meal of lentils and rice so I decided to combine all three.

I cooked the black beans and lentils with a strong base of chicken stock and then simply cooked a cup of basmati rice to combine with the lentils and blackbeans. Yummy. I don't add much seasoning to this dish as the chicken stock is enough flavor for me, but you could add garlic, onion and some pepper if you wished.

I've got a big pot of black eye peas and a combination bean soup and barley mix and a big ole ham bone all simmering together in a big pot on my stove this afternoon..house smells yummy..we'll have hearty soup this evening later.
...........your idea sounds good too..it's good weather for a warm hearty bean dish.

we eat a lot of beans and lentils here... I love pouring about 2 dry cups of lentils in a pot with black beans, carrots, pearl barley, onion, garlic, sweet potatos and garbanzo beans along with some sea salt and veggie stock. MMMMM so hearty, meatless, full of yummy warm goodness and there is usually enough to can some for another day...
