I'm so blessed to have found and am able to participate in this wonderful community. I've just joined (member #106) and am looking forward to supporting all the farm girls in my community. I'm an edge-of-the-city, farm girl in the making! I appreciate any and all suggestions I can get. I have a small vegetable garden in my back yard and plant flowers everywhere!! I love to cook and have a fantastic recipe for homemade vanilla extract that is easy to make and better than anything you can buy. Im happy to share!

I have a bit of an unusual past. I'm a disabled veteran of the United States Air Force. I was a survival trainer and maintainer of all things outdoors. I've suceeded in land survival training, arctic survival training and water survival training. Right now I'm recovering from back surgury associated with my service to my country. I look foward to getting to know each of you better!

Thanks for the warm welcome!! I was first introduced to Mary Janes Farm when I bought her book from the Crafters Choice Book Club. I fell in love. I have so much to learn about my NEW life as a Farm Girl. How do I find a Hen House to join? I'm teaching myself to cross stitch. I want to learn to sew, crochet, knit, can preserves, etc. It's one thing to be able to build a camp fire in any situation....an entirely differenct concept to learn to be the Ultimate FarmGirl!!!..especially approaching my 44th B-Day!! Sounds like you will fit right in, and we will learn as much from you as you will from us! I hope your recuperation and recovery continues to go well for you and thank you for your loyal service to our country.

Thanks ladies - so much for the warm welcome!! I'll be joining the henhouses to learn from each of you!! I'll also include some practical survival tips-some humorous and some to take seriously.

First, here is the homemade vanilla extract - a survival item for every kitchen!!! If you'll send me your addresses, I'll mail the history behind it that I discovered in an old southern cookbook where the recipe originated:

2 vanilla beans

preferrably from a reputable local store where spices are sold (The beans from McCormick and other national brands tend to be too dry and old. I get mine from the Spice Merchant in Wichita Kansas on Douglas (they have a web site). You'll want to look for beans that are moist to the touch and roll easily in your fingers. Tahitian beans are my favorite.

4 ozs cognac or brandy (I use Hennessey Cognac)

Split the Vanilla beans Lengthwise; then cut accross the lengths in 1/4 to 1/2 inch sections. Use an empty spice jar or other tight sealing GLASS jar. Pour in the cognac and add the vanilla pieces. Yes, all of them. Shake well and store in a dark, cool cupboard 2-3 weeks - shaking well every couple of days. That's it.

As the vanilla is used, the beans will support an additional 2 ozs of cognac. Use this vanilla generously!! A little on ice cream or added to coffee is delicious!! This also makes a wonderful gift for cooks on your gift list. decorate the jar with a pretty label and tie a seasonally symbolic fabric onto the lid with a rubber band and twine or rafia over the band in a bow.

My friends and family request it every year!!

It may seem a little expensive, but consider that the vanilla you get in the store is sold for about $5 - $6 an oz.

The vanilla you buy in the store is made with cheap grain alcohol. You'll never go back!!!

I served at the 71st FTS Vance AFB, Enid Oklahoma (undergrad pilot training - then was assigned to the 1550th Combat Crew Training Wing, Kirtland AFB, Albuquerque, New Mexico (rescue helicopters, pararescue, C-130 Hercules) - then at the Farthest North Fighter Squadron, Eielson AFB, North Pole, Alaska F-16 Blue Fox/A-10 Warthog Fighter aircraft Yes ladies, a 6-ft blood with an attitude and a 9mm with a round chambered at all times! Someone had to keep the guys in line!!!! Sooooooooo many stories to tell. Oh, and I was a single mom, too!!!

Again, thank you all. I am so proud to having served my country. I'd do all again..no matter what the cost!!! I'm recoverting slowly..I'll never be quite the same physically..but I'll keep going in every way I can. My low back is pretty much toast..so I have to be careful. Gardening takes me a little longer..but I love the feel of the warm earth between my fingers and the pure pleasure of watching God's miraculous flowers and veggies come up from seeds! I'm a back-yard gardener and work with what I have. I'm putting in a veggie garden this year and already grow many edible flowers, herbs & shrubs. There's something special about cooking with fresh rosemary and basil; fresh lavender in your bath.

Home cooking is my other passion...I hope all of you try the vanilla recipe posted in this forum. It may seem expensive..but you can join forces with friends, family to split the cost of the cognac. Soooo worth it!

Keep in touch and, again, thank you all for the warm welcome. I've included a recipe for baked oatmeal that is fantastic on a cold winter morning:

Baked Oatmeal2 ¼ cups quick cooking oats OR 2 ¾ cups old fashioned oats, uncooked (I used OLD FASHIONED OATS)
2/3 cup brown sugar (I USED 1 CUP)
¾ cup raisins, craisins, or other dried fruit (I SKIPPED THIS INGREDIENT)
1 cup chopped walnuts (I used PECANS)
1 tsp cinnamon
½ tsp salt
3 1/3 cups skim milk (I USED 2% MILK)
4 egg whites – lightly beaten
1 tsp vegetable oil
1 tsp pure vanilla extract
Milk, yogurt, fruit, etc – as desired for toppings
Preheat oven to 350 degrees. Spray an 8-inch glass baking dish with cooking spray. In a large bowl, combine oats, sugar, raisins, walnuts, cinnamon and salt. Mix well. In a medium bowl, combine milk, egg whites, oil and vanilla and mix well. Add the wet ingredients to the dry ingredients and mix until well blended. Pour into prepared baking dish. Bake at 350 degrees for 55-60 minutes or until center is set and firm to the touch. Serve topped with milk or yogurt and fruit, if desired. Store leftover oatmeal tightly covered in the refrigerator.
