I just signed up for this and not sure how to use or where I belong but my question is this:
My hubby's got a "BUMPER" crop this year and tho I usually have no problem canning freezing or cooking his harvest I do not know what to do with a back porch full of HUGE banana squash,do ya freeze what you can't eat? Have thought of taking the whole lot to a soup kitchen, lol, there are only two of us, can't eat it all!!! |

Yes, we have a farmer's market, I would rather give it away and I will, but was kind of wondering what to do with remainder of the squash after I have cut into one, we are two and I don't know if I can freeze it or do you can it make a pie, I really have never eaten any |

They make wonderful pies! Use just like pumpkin! It is really good. You can can it up in chunks about 1" in quart jars to use later too, and freeze it also. I love to can it..just peel and cut in chunks, raw and hot pack. You can find canning times in any canning book..it would need to be pressure canned. Nice to have on hand. When I was little my mom would make banana sqaush by baking about a 1/4 of a big one with butter and brown sugar on it. I always thought of it as a dessert thing! Now I prefer it baked...cut side dwon in a pan with about an inch of water, until tender, and then I put some butter and salt and pepper on it. I wish I had that sort of excess right now..haha! None of my winter squash did well this year..except pumpkins..which I should have plenty of for Halloween decorating at least. Good luck~

Ah Jenny thank you so much, my hubby has a trailer full of these, I will definitely can, freeze and ENJOY thanks to you!! He also has a field full of pumpkins that are already about 12-18 inches in diameter, but the grandkids have their eyes on those for Jack o'lanterns!!! He is the green thumb in the family and I, (thank God) love to can. He has a huge garden that is fenced in and he plants another huge garden for the deer, very relaxing to sit on porch in evenings and watch our mamas with their fawns. |
