COM sounds great! I am realizing that I thought I had a handle on Christmas and am starting to realize that I didn't! Yikes! Time to get my hinny in gear and just get it done! It looks like this afternoon is destined for errands!

Well..... my oil has not cleared, so I started doing more research to find out what to do/not to do, etc. In doing so, I found this on a web site and it is enough for me to not give away this particular batch. There are many sites out there that tell you how to do them, so I will keep researching, experimenting, etc. The last thing I want is to make someone sick!
"A food safety note: do not make flavored oils. The oxygen-free environment that exists around herbs, spices, and other ingredients placed into oils is the ideal place for botulism to grow. If you want to include a flavored oil in a gift basket, purchase commercially made flavored oils and do not transfer them to another bottle."

Here are the Popcorn Seasoning recipes. We use the buttered microwave popcorn. Put in a movie and enjoy!
CAJUN POPCORN 2 teaspoons paprika 1 teaspoon onion powder 1 teaspoon garlic powder 2 tablespoons salt 1/2 teaspoon fresh ground black pepper 1 pinch cayenne pepper (optional)
SOUTHWESTERN POPCORN 1 1/2 teaspoons chili powder 2 tablespoons salt 1 tablespoon ground cumin
ITALIAN POPCORN 1/4 cup finely grated parmesan cheese (about 1/2 ounce) 1/2 teaspoon dried oregano 1/2 teaspoon salt 1/4 teaspoon fresh ground black pepper 1/4 teaspoon crushed red pepper flakes (optional)
CURRY POPCORN 1 tablespoon curry powder 2 tablespoons salt 1/4 teaspoon fresh ground black pepper 1 teaspoon turmeric 1 pinch cayenne pepper
COCOA POPCORN 2 tablespoons powdered sugar 1 tablespoon cocoa powder 1/4 teaspoon salt 1/8 teaspoon cinnamon
Place all of the ingredients in a medium bowl; stir until they are combined, and transfer to an airtight container for storage. Season popcorn to taste.

And for my sister's Christmas gift.....
SEASONED RICE MIX 3 cups uncooked regular brown rice 1/4 cup dried parsley flakes 6 teaspoons instant chicken or beef flavored bouillon 2 teaspoons onion powder 1/2 teaspoon garlic powder 1/4 teaspoon dried thyme leaves
In a container with a tight fitting lid, combine all ingredients and mix well. Seal tightly and store in a cool, dry place for up to 6 months. Stir well before each use.

Pop popcorn
In sauce pan over low heat, combine 1/2 stick butter, 1/4 to 1/2 cup brown sugar and 2-4 large marshmallows. Drizzle warm caramel over popcorn. More butter makes it thinner and more brown sugar makes it grainier and thicker. More marshmallows makes it more sticky and thicker as well.
Anyway you make it- it's yummy!

Since I failed to include what to do with it, here you go. Sorry about that!
In a saucepan, bring water to a boil. Stir in rice. Cover, reduce heat and simmer for 45 minutes or until water is absorbed.
For 4 (8) servings: 1 (2) cups rice 2 1/2 (5) cups water

We are having elk steaks and homemade pasta with roasted garlic and a nice green salad tonight. The rich food has really done me in, so it's leaner stuff for me I love to do the baking, but am glad that I have friends to give the goodies too. I actually love bringing plates of cookies to neighbors and wishing them happy holidays, it's fun.

Hope everybody had a peacefull Christmas. I was haunted by the thoughts of the farmers and grangers in Washinton who got flooded and lost everything... Lizzie posted on the forum through Jen the following info:

I, too, have been thinking of the people and their terrible losses. They both suffered so much as well as did many others. Let me see if we can get some other sisters to aid us in this. I think that we could all just buy Gift Certificates and have them sent to the various farms. I will do all that I can. Thank you for being such a help Corinne. Since we all seem to be fans of Christmas, we could start a Christmas 2008 club and spend part of every month making things for next Christmas and sharing our projects with each other. We can post pics over in the henhouse and talk about Christmas crafts/recipes in general. I think it would be fun and a good way to share and get to know each other better.
