We are planning a camping trip at the end of October and I thought it would be fun to make big pot of stew that we can cook over the fire all day. Any recipes of suggestions. I am planning to cook in a cast iron dutch oven. I just love camping and thought it would be wonderful to smell the stew cooking all day on the fire!

I'll tell you what, someone posted here back around Christmas about a cowboy stew, and I make that in my crockpot--don't see any reason why you can't make it over the fire and let it simmer all day long. It's really yummy, and guys, kids will love it, too.

It's a can or two of baked beans (I use the large bush's, but it's just the two of us)
some barbecue sauce
garlic
s & p
pork roast trimmed and chopped
chopped onion.
You can also add a carrot or two. I did and forgot that dh doesn't like them!!!

Man is it good! Doesn't take much effort, you can do all your chopping before you go, and that slow cooking over the fire for the pork roast would be FABULOUS!!!

white bean and chicken chili
sausage, corn and potato chowder (add assorted veggies like squash, peppers, tomatoes, etc.)
curried beef and pumpkin stew with potatoes, sweet potatoes, bell peppers, carrots and onion
