Hey farmgirls... DH's 50th is today but he will be home tommorow to celebrate. I want to bake him a "red velvet cake". I have had this and it is to die for! It had a cream cheese frosting of some sort. I think it is an old Southern recipe? Plan on roastin a chicken, herbed potatoes and fresh steamed corn on the cob! Any recipes floating out here for this cake? Thanks!!!!!

I don't have one, it sounds delicious though. ROFL the mention of it reminds of Steel Magnolias, and the "armadillo groom's cake" Just steer clear of grey icing!

The "armadillo groom's cake" in Steel Magnolias was a red velvet cake with grey icing...

oh! I do have a recipe for this..and its good! My oldest son requested it on his 25th birthday..right after moving here from Kentucky (where it is more popular) luckily I had bought a cookbook while I was there visiting earlier and had the recipe.
RED VELVET CAKE;
1/2 cup butter 1 and 1/2 cups sugar
2 eggs 2 oz. red food coloring (that is two of the small bottles!!!)
2 heaping TBSP cocoa 1 cup buttermilk
2-1/4 cups self rising flour 1/2 tsp salt
1 tsp vanilla 1 tsp baking soda
1 TBSP vinegar
In a large bowl, cream together the butter, sugar and eggs. Make a paste out of the red food coloring and cocoa and add to egg mixture. Add buttermilk, flour and salt and mix well. In a separate bowl, mix together vanilla, soda and vinegar. Fold into mixture. Pour into 3 greased and floured 8" cake pans. Bake at 325 for 25 to 30 min or until wooden pick comes out clean.
Frost with cream cheese frosting...
I hope you (and husband) like this!! I had written in my cookbook that it was really really good.

Hey MeadowLark -- I'm on my way over to your house for dinner!! Tell hubby Happy Birthday. Red Velvet cake sounds so good. I haven't had that for years.

Girls, a fun thing to do with this Red Velvet cake is to use one bottle of red food coloring for one layer of the cake and a bottle of green food coloring for the second layer. Then use the regular cream cheese frosting and put between the layers and over the outside of the cake. You will have a beautiful Christmas Cake in red/green and white. I usually double the recipe and make 2 green layers and 2 red layers and then have two cakes. They certainly disappear quickly at my house!
