I have an older Betty Crocker cookbook (probably got it back in the late 70's) and it got packed away in a box a while ago when I thought we were going to be moving. I am desperately looking for the recipe that I always used for zuchini bread. I think it was with the recipe for pumpkin bread and just subed the zuke for pumpkin. I remember that the recipe used solid crisco not oil and also had like a cup of water in the recipe. If anyone has that cookbook and can find that recipe I would be forever grateful. THANKS

Hi Kathy,

I think I have that cookbook; it was a wedding gift 26 years ago, and STILL one of my favorites. I'll look through and see if I can find the recipe for you. If not, I may have a "just as good" recipe for zucchini bread.

Kathy,
I checked my bookshelf and find that I have McCall's cookbook (circa late 1970's) not the Betty Crocker one. Sorry about that, but as promised, here is the zucchini bread recipe I have used for 20+ years, to rave reviews. No Crisco or cup of water, but here if you are being over-run with zucchinis, give this one a try! It works great if you grate the zucchini and freeze it in 2-4 cup amounts in Ziplok bags to make the bread throughout the winter. Just drain off part of the liquid before using the frozen product.

Zucchini Bread
Mix together:
3 eggs
1 cup salad oil
2 cups sugar
3 tsp. vanilla
Sift together, then add to above:
3 cups flour
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
1/2 tsp. baking powder
1/2 cup chopped nuts (optional)
4 cups grated (fine) zucchini - (DO NOT PEEL)

Grease and flour 2 loaf pans (8x5 inch). Distribute batter into each loaf pan and bake 1 hour at 350 degrees. Remove bread loaves immediately from loaf pans and let cool.

i think i have it.
here goes:
2/3 cup of shortening
2 2/3 sugar
4eggs
3 cups shredded zucchini
2/3 cup water
3 1/3 cups of all purpose flour
2 teaspoons baking soda
1 1/2 teaspoon of salt
1/2/teaspoon of baking powder
1 teaspoon of cinnamon
1 teaspoonn of ground cloves
2 teaspoon of vanilla
2/3
cup of coarselly chopped nuts
2/3 cup of raisins
heat oven to 350. grease bottoms only of 2 loaf pans, 9x5x3 inches , or 3 loaf pans.
mix shortening and sugar in large bowl. add eggs, zuccini and water.
blend in flour, baking soda, salt, baking powder, cinnamon and cloves and vanilla.
stir in nuts and raisins.
pour in pans.
bake 60-70 minutes.
this recipe is in my betty crocker cookbook circa 1978.
it is for pumpkin bread but has the substitutions listed below for the zucchini bread.

Frannie, THAT'S THE ONE!! All I could remember about the recipe was that it used solid crisco and had water in it. Now if we can just get the remps to cool off here some (we are under a heat alert today) I can fire up the oven and get rid of some of these zukes. Thanks everyone!!

glad to help, i cant stand it when i cant find something i know i have somewhere......
anyway, i do look up recipes on the computer now and i have started a file of them, but i still cant give up my recipe books. ......and i got that one when i was first married too. was that just on the mandatory gift list or what?

Most have been because somewhere around here I have one. The one we use the most is one from an estate sale, Betty Crocker's Piture Cookbook, I think it was from the 50's, what is fun is the gal pasted in recipes that she lved and wrote ones in here as well. It is a treasure we love.
Not it's gonna bug me where in the heck is the other one we got when we got married. hmmmm may have to go on a hunt tomorrow.
