So I took the plunge yesterday and successfully canned 28 quarts of green beans.........for the first time ever.
I'm used to water bath canning, but this took some getting used to. glad I bothered to read directions thoroughly, as I almost over filld the canner with water.
Last summer I visited a dear friend and had a lesson on canning by her. Good thing, 'cause now she is in a nursing home and can't remember too much at all! I feel very fortunate.
All but 1 jar look really good. The mess-up might have been due to the lid not being tightened all the way. It was only 1/2 full of liquid when the processing was done.
So now this opens up all new possibilities. Only catch is waiting for the completed processing times.
a friend at work has already placed an order for beans and also for corn. So hopefully it will all be tasty for her. So now we wait for our corn to come in (we need some rain). This lag will allow time for the beans to set and hopefully not grow anything!
Yea! Hubby gave me kudos too, so I'm off the hook for picking and snapping beans for the rest of the year. Oh, and by the way, I snapped as I picked, so all was ready to go.....and no boring setting around a pot of strings and bean ends. ha ha |
