Not at ALL what you think of when you think "pancake."

I made this for myself for lunch today, since DH ate leftovers and my brother (staying with us for the summer) won't eat anything healthy. They're fast, and quite yummy!

1.5 cup grated, unpeeled zucchini
2tsp grated, chopped onion
1/4 cup flour (I used whole wheat)
1/4 cup Parmesan cheese (I used more, haha)
2 eggs
salt & pepper to taste

Press zucchini between paper towels. Melt 1tbspn butter in skillet. Mix all ingredients together. Spoon batter (2 heaping tblspns) into skillet. Flatten with spatula. Cook over medium heat until browned on both sides.

Lynn, these remind me of the potatoe pancakes my mom makes. I like recipes like this and will give it a go. Thanks for share it.

The recipe also reminds me of the potato pancakes my grandmother used to make. I will also try it. Thanks.
