Let's post what we're having for dinner tonight and share ideas for inspiration! I'll start: We're having cheese omelets and banana blueberry bread I baked this morning. I'm trying to use up perishables before Saturday (eggs, bananas, blueberrries). Whats for dinner at your house?

Pasta salad with sun-dried and fresh tomatoes, basil ribbons, red onions, chunks of cooked chicken, dressed with balsamic vinegar & olive oil and sprinkled with parmesana reggiano. I'm making banana blueberry muffins in the morning for breakfast!

What ever Butch Makes!!!

I am working til 10pm all this week girls..
& i am such a glutten for punishment.. I have signed up for OT too!!
8am to 10pm today.. 10am to 10pm tomarrow!!

Yesterday was holiday pay.. I came in at 7am.. but only worked until 3pm..
Gotta pay for that Craft fix somehow ya know!

Kathie - you gotta a guy that cooks? If I had to depend on DH we would eat the only two things he knows how to cook on alternating days - Never Fail Fudge and some god awful salmon thing that he created, that he bakes in vinegar.

Katie - you should write for a food magazine!

oooooooohhhh.!! i LOVE Gyros!!

& All kindsa Pie of course.. Sept peach.. yuck!

yes.. he cooks.. pretty well usually..
NEVER cleans up after himself.. but.. i suppose we can't have it all..

This is funny.. he used to drink beer & smoke.. but decided that he needed to quit doing both when his blood pressure & Diabetis paid him a visit.. BUT.. when he was drinking.. WOW.. ! He REALLY was an excellet cook!! he still come up with some great dishes now.. But nothing like he used to.. he seems to have lost a bit of his kitchen adventure along the line of pouring the beer down the drain.. tsk..

I suppose we have to take the good with the bad..

Here is a yummy meal for the summer, I have used steak or chicken. My husband usually does the grilling and I do the preparing. He thinly slices the meat and we have guacamole, cheese, tomato, and lettuce.
FAJITA MARINADE
1/2 c. onions, chopped
1/2 c. olive oil
1/3 c. red wine vinegar
1 tsp. oregano-- or parsley
1/2 tsp. salt
1/2 tsp. pepper
2/3 c. lime juice
3 cloves garlic, pressed or well chopped
1/4 tsp. steak seasoning or some other favorite seasoning
1 1/2 to 2 lbs. meat

Combine all ingredients. Marinate meat overnight. Cook over medium high coals 6 to 7 minutes each side or until done.

This just has the best flavor. We didn't have it tonight but we have it quite often. I have used boneless skinless chicken breast or some chuck or round steak. You don't need a ton of meat because you slice it so thin.
Tonight I made crock pot BBQ Pork Sandwiches and corn chip salad. It has been rainy and nasty here the past two days so it sounded like a rainy day meal to us.

I am so glad my dh likes to cook, I would be in big trouble sometimes if he didn't. We ate leftovers, bbq'd pork, some watermelon, whaever was there. TTTOOOOOOOOOOOOOOOOOOOOOOO HOT to cook. Will do something tonight, late, for tomorrow....

Tonight was Shabbat, and we had roast chicken and beets and turnips from our CSA. (Tiny baby ones, tender and sweet). I sauteed the beet greens in some olive oil and garlic. I made a green bean dish I invented last week, which is just delicious- it's green beans (from the CSA) with fresh mozzarella and cherry tomatoes (also from the farm) all with a vinagrette dressing over it. It's so good! And a fresh salad with peppers, onions, cucumbers, and more cherry tomatoes- raw milk cheese, and homemade Ranch dressing. Challah with butter, Mogen David wine, and raspberry and lime sherbet sprinkled with chocolate chips for dessert. Man, was I proud of tonight's dinner! :)

Apparently the pesto I made last night was too good NOT to have again tonight! Jus decided that he would simply eat more pasta with pesto, please. After he finished eating, he said, "Pesto is the new meatloaf" which I guess means for the next 6 years, I'll be making something with pesto once a week!

Sure, Alee. It's from the Victory Garden (PBS) cookbook from the origination of the show in 1982. I've tried others, but I always go back to this one. It's straightforward and tastes the best (I think)--Also, it doesn't take a 1/2 cup of expensive pine nuts like some recipes call for!!!!

2 cloves garlic
1 tsp salt

3 cups basil leaves
2 tbs pine nuts
1/3-1/2 cup of olive oil (I tend towards the 1/3)
1/2 cup finely grated parmesan cheese

Peel and crush garlic; mash and add salt to form paste. If you use a food processor, go ahead and put basil, pine nuts and pulse until chopped. Scrape garlic and salt into mixture. Add olive oil a little at a time, continue pulsing, adding cheese at the very end. Usually, I just stir the cheese in by hand, so it doesn't get lost by the processing. I like a texture.

We are having broiled chicken with corn and sweetened blackberries tonight. Nothing too fancy but it should be yummy none the less! And you know what is even better? Doug made it all! I get to sit on the couch and not have to worry about a thing!

We totally "slummed" it tonight with delivered pizza. I volunteer on Tuesday night at the VA, and normally have something in the crockpot, but didn't plan....oh well. Tomorrows another day!!!

We had chicken fried elk steak, roasted potato chunks with rosemary , cream gravy (of course..GOES with the CFS) and cottage cheese and tomatoes with cucumber slices too...mixed berries for dessert.
