I made this for Jackson for lunch today and (gasp!) he actually loved it. It comes from a mix of recipes from a few recipe books but the main idea came from "Organic Baby and Toddler Cookbook" by Lizzie Vann (ISBN 0-7894-7190-6).
Avocado Dip/Spread
1/2 avocado, mashed 1 small or 1/2 large carrot, shredded 2 big spoonfuls cream cheese (I used onion-chive flavor) 1 big spoonful plain yogurt
Mix together and spread inside whole wheat pita bread, slice into pizza-style wedges.
Can also be used as a dip with lightly steamed carrots, breadsticks or crackers.
I'm sorry, but when I read the title to this thread the first thing that sprang to mind was that the instructions would involve toddlers. Like "Grind three toddlers" or "Chop toddlers fine before mixing with mayo and spreading on bread."
It must be mommy brain, but I don't know which one of us has it worse.
LOL! The first thing that popped into my head was "hmm... that's kind of Hansel and Gretel isn't it?" but I also logically knew what you meant, but I got a smile!
