For those of you that do brunch for Christmas, this is a keeper and someone asked for it again so....Enjoy!

(It came from Mary Engelbreit (or Emmerling's) magazine quite a few years ago. )

4 eggs
1 cup flour
1 cup milk
butter
1 tsp @cinnamon, allspice,ginger
1-2 tsp. vanilla extract
2 cups sliced strawberries or
2 apples sliced and peeled

Saute apples w/butter and spices right before serving.

Preheat oven to 375.
Place eggs , flour and milk in blender. Melt butter in oven proof skillet and pour batter into skillet. Bake at 375 for 20 minutes until puffy and golden. Top with fruit and serve.Fresh whipped cream may be added if you are feeling wild and wicked!

I have fresh strawberries and this will be our Sunday breakfast treat! Can't wait to make it.

I made this for breakfast this AM and it was incredible!! I used fresh strawberries for the topping and sprinkled a little powdered sugar over the top. Needless to say, there is none left! Thanks so much for sharing this recipe.

Glad you like it! We sure do! If I make it just for us there is usually more than enough for 3-4. If I do it for brunch I do two skillets and cut it into 6 or 8 pieces, since there is alot of other food to try also.

I do this one alot too. It's one of my favorites and so easy. I usually serve it with strawberries and vanilla yogurt. If you leave out the spices it's just like crepes only easier.

My daughter seves it with the apples or apple pie filling.

I make a ww version of this and serve it with maple syrup and butter just like regular pancakes...it's much simpler though because I can get on with my morning chores instead of standing over the stove flipping pancakes.

We used to make this one when we had our cow and chickens. I'd whip some cream while the pancake baked, and as soon as it came out I'd sprinkle on some chunks of dark chocolate so they'd get melty. Then I'd blob on my sweet cow's good whipped cream, and serve. It was deeeevine!

Bramble, This sounds wonderful! Thanks for sharing this. It's my new Christmas morning tradition in the making. Trina, is "ww version" "weight watchers?" If so, I'd sure like to see that recipe too. And, Mary Ann, the addition of chocolate does sound divine indeed!

Bramble, I made this on Christmas morning and my family loved it. I made both the buttered apples and a berry combination of blueberries and raspberries. We topped it with maple syrup and whipped cream. Lovely dish! Thanks!
