The inner farm girl in me has finally escaped. She demanded I join these forums so she has an outlet for her creativity and a place to meet new friends. Living in a mostly suburban area has been a culture shock since I was raised in a small East Texas town. Now I live in a 704 sq. foot apartment, but travel to my parents' small farm, as well as the local farmers' markets, as often as possible to get my "farm fix."

This week I find myself the proud owner of about 2 pounds of radishes, 15 pounds of summer squash, 5 pounds of green beans, 24 mason jars and recipes on how to pickle produce. This will be an experiment in canning -- something I've not done in years, and never pickles. I'm diabetic so this will also be an experiment in using either recipes that do not call for sugar or using a sugar substitute.

I am open to any suggestions on how to pickle green beans and radishes. I finally found the heirloom squash relish recipe so I'm off to start chopping veggies.

I'm looking forward to learning as much as possible at the feet of all of you amazing farm girls. Thanks for letting me join in.

Isn't gardening awesome!?,,,, with a handful of seeds you can grow a mountain of veggies & fruit.... I rememeber my very first seeds that I planted (other than beens in wet paper towels @ school),,, were radishes,,,,,they will grow most anywhere and are an awesome first plant for kids.
I am to lazy to pickle my own pickles so I buy store bought,,but after I eat all the pickles I quarter slice up tomatos & soak them in the pickle brine for a day, oh yummm!

Ooh..I don't know about the radishes but dilly beans for sure!! I canned a bunch last year and they are a big hit with our family. I think the recipe got posted here last year..if you don't find it under the kitchen section (way back last August probably) I will re post it. Have fun..I love canning..and welcome to the group!! You will love it here for sure..we all do!!

Welcome!! SO glad to have you and the very best with your canning!! I love to can, but honestly have never made pickles or sugar free recipes, so I am afraid I will not be of much help, but I will be happy to look out for some! Do tell us how they turn out! Again welcome and see you 'round!

Welcome, Kay! I'm so glad you've joined us. I've never canned pickled green beans, but it sure sounds yummy. I'm sure someone here can help you!
I'm getting ready to can salsa- last time my friend and I made 58 quarts. It was gone in less than a year. Homemade food is sooo much better!! Keep us posted on your canning adventures!!

Did you try Salvia ? It is a type of natural sugar derived from a plant, it is sold in Heath stores, comes in powder or liquid form and one drop equals a couple of oz.

Welcome, Kay. I think Corinne may be talking about 'Stevia'. It's a very sweet natural sweetener with no aftertaste. I bet it would be great in recipes.

Thank you all for the generous welcome. I'll go look for that dilly bean recipe. I ended up blanching and freezing the beans last night as I ran out of steam to can last night after work. There is always another picking in my future to pickle some. Tonight the squash goes into jars. It is quietly soaking in the fridge while I work today.

I wish I could reach through the net and hand you each a jar.

Hi Kay, and Welcome!!!! (Though I'm as new as you are. LOL) Gosh, what a change to go from living on a farm, growing up, to living in such a tiny apartment. How did you first canning experience go??? Pickled Green beans are something we're hoping to make a lot of later this summer when our garden starts producing as well. If you find a good recipe (we've got an ingredients list, just not proportions) could you let us know???? Best of luck with your experimentation!
