This recipe is from my friend, Karen Carter and it's the BEST banana bread I've ever had:

Excellent Banana Bread (makes 2 loaves)

3/4 C. butter, softened
1 (8oz) pkg. cream cheese (can use low-fat), softened
2 C. sugar
2 lg. eggs
3 C. all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 C. mashed ripe bananas (4 med. bananas)
1 C. chopped pecans, toasted
1/2 tsp vanilla extract

- Beat butter and cream cheese at med. speed with electric mixer
until creamy. Gradually add sugar, beating until light and fluffy.
Add eggs, 1 at a time, beating just until blended after each
addition.
-Combine flour and next 3 ingredients; gradually add to butter
mixture, beating at low speed just until blended. Stir in bananas,
pecans and vanilla. Spoon batter into 2 greased and floured 8 x 4
loaf pans.
-Bake @ 350 degree for 1 hour or until a long wooded toothpick in
center comes out clean and sides pull away from pan, shielding with
foil last 15 mins. if needed, to prevent over browning.
-Cool in pans on wire racks for 10 mins. Remove from pans and let
cool for 30 mins. on racks before slicing.

Cinnamon-Crisp Topping:
Stir together 1/2 cup firmly packed brown sugar, 1/2 cup chopped,
toasted pecans, 1 Tb all-purpose flour, 1 Tb melted butter and 1/8tsp ground cinnamon. Sprinkle evenly over bread and bake as directed.

My inlaws are coming this weekend. I may have to try this if I can squeeze in some time before they get here. With cream cheese! Sounds yummy! Thanks!

Peg, I just had to let you know that I made your yummy banana bread today. I had copied it off a few days ago and when I realized that I had some over ripe bananas, I was on my way. I didn't have pecans so used walnuts instead and the bread was great! I DO think it would be ever better with pecans but I wasn't thrilled about paying a small fortune for them the other day.

Anyway, the recipe is a keeper for sure...thanks!! Cindy
