I put up 7 pints of Good Mother Stallard heirloom beans today and they all sealed. This bean makes a really good broth which I like.

Latest canning project is for Christmas gifts. Trying the recipe for Apple Thyme Jelly. Makes 4-ish half pints. This should fit into my jam maker. Uses apple cider and I love making regular apple jelly from our local organic produce guy. He makes fresh cider every fall....until he runs out! adding thyme, the jelly goes on pork, cheese plates, and toast! Has anyone tried it?

Sara, the Bean Queen is Back! Sylvia, that sounds really good. Where did you find the recipe? We also have some good local cider right now. I canned 6 pts kosher pickles and 6 pts bread and butter, and 3 more pints of salsa. Have a ton of tomatoes to can. $6 for about 20 lbs at the Amish. Thinking of doing some stewed and maybe some bruschetta |

Here's what I found: Apple Thyme Jelly with Cider To make an easy apple thyme jelly, follow these simple steps: Gather ingredients: 4 cups apple juice, 1 tablespoon fresh thyme, 1 package pectin, and sugar. In a pot, combine apple juice and thyme; bring to a boil. Stir in pectin and boil for 1 minute, stirring constantly. Add sugar (about 5 cups) and boil for another 1-2 minutes until dissolved. Remove from heat and strain to remove thyme leaves. Pour into sterilized jars and seal; process in a water bath if desired. 10 minutes. I plan on leaving the thyme leaves in the jars.

In case anyone is interested, Fillmore Container has Superb lids for $170 for 2100. Their shipping is pricy (like $25), but it still comes out to 9 cents a lid. I'm just trying to decide if I need 2100 lids! |

Put up 8 pints chicken broth and they all sealed. Not doing the happy canning dance cause I had a nosebleed while canner was cooling and I'm taking it easy.

Oh dang it Sara! I hate that a nosebleed interfered with your happy canning dance! I hope you are OK! I wish I had some local gals that would go in on the lids and we could divvy them up. It is a great price, but I'm with you; that's a LOT of lids. Canned stewed tomatoes, green beans, and chopped tomatoes. Want to try green tomato pickles. Has anyone tried these, and if so do you have a good recipe? |

Good job on your canning, Lisa. I haven't made green tomato pickles but have made a green tomato relish. Don't think I had a recipe for it. I just added onions, red bell pepper, spices, jalapeno pepper, and 5% apple cider vinegar.
I checked my canning books and didn't find a pickle recipe but did find two interesting recipes in my Preserving Italy canning book.
Green tomatoes preserves. Green tomatoes preserved in salt.
If you are interested in either or both recipes I will copy them on printer and mail them to you.
Ball Blue Book has a green tomato mincemeat recipe.

The kitchens have maybe cooled down a bit with all the canning. Great to have so much preserved for the winter and beyond. I have a few things to do yet, when the weather turns. Jams and jellys, and some more beans. Pumpkins are on the porch ready to be cooked down too. I have kept a few apples in a basket out there too. They are staying so nice. Much better then when I put some in the refrigerator. But that will only work for so long. Enjoy the fruits of your labor!!

Michelle sounds like you have a plan for canning when the weather turns.
I have heirloom beans to put up along with recipes in my canning books I want to try, just need a string of good days to get some of it done.

Here's to you Sara! I am canning green beans, roasted tomatoes, and have a huge batch of tomato soup in the roaster that I will puree and can. I took advantage of the Amish 1/2 price end of year sale and LOADED up the back of my car. Of course, now I have to DO something with all of it. Oh and still have green tomatoes in my garden that will need to be picked before tomorrow night. We are expecting a freeze. May make some fried green tomatoes and think of the movie |

Lisa, great buy on the Amish 1/2 price sale. Fried green tomatoes done right is one of my favorite foods. Done wrong they're a soggy mess. I have faith that yours will turn out perfect. Didn't read Fanny Flagg's book but did see the movie and loved it. 20 odd years ago in Van Alstyne, TX there was a restaurant called the Whistle Stop Cafe next to railroad tracks. They made the best fried green tomatoes I have ever eaten.

Don't be so sure Sara. I'm horrible at frying foods. The book is equally good, if not better, as is usually the case. I listened to the book on tape, and Fannie Flagg read it. She has such a great narrative voice. If your library can find a copy, it may be worth it. |

A little Fannie Flagg trivia. She played Bob Newhart's receptionist on the old Bob Newhart Show. Nothing to do with canning but fun to know. May have to be my age to remember the show.
