Kate, your chicken of the woods mushroom dishes sound so good. Not sure if they grow in part of Texas but I have seen them on the cooking shows I watch.

My cardiologist told me how he cooks dry beans. I staple using either 4 cups of water-creates little gravy, 5 cups water, some gravy, 6 cups, good gravy. Just tried it today. Added dried jalapeños, dried onions, garlic and bay leaf.Should be great. Beans are the mayoco beans which cook up creamy.

I made the Roasted Chicken and Buttercup Squash with Herbed Honey Mustard in the Oct-Nov issue. I misread the ingredients and used a butternut squash, but it still tasted good and my sweetie liked it.
