I've made ketchup. The first time I made it with our home grown beefsteak tomatoes. I don't remember exactly but got a good yield., like 4 or 5 pints. The next time we gleaned a neighbors field after the harvesters had gone through. I will never do that again. We ended up with little over a pint of ketchup. Those tomatoes were all water.
It's good to make your own but I would advise against using store bought tomatoes.

I have made ketchup also. It is ok. I need to find a better recipe.

Michelle, I found a ketchup recipe in my Harris' Farmer's Almanac Magazine from 2015. It calls for 3 cups apple cider vinegar, anything with apple cider vinegar has to be good. It's more than I want to post but if you want it, I will copy it and get it in the mail.

If anyone else wants the recipe I will copy it and mail. If I do not have your address, please e-mail it to me.

I used the recipe in the Ball canning book circa 1975 and added a few more spices.

Today I canned 8 4oz jars of cherry preserves and they all sealed.

I need to figure something to do with all my tomatoes. We don't make our own pizza so tomato sauce or pizza sauce really wouldn't work. They are not huge tomatoes. What are some other ideas? What do you can with your extra tomatoes?

I just can the tomatoes. Then you can use them for whatever you want. I also just like to stew some up with onions, okra, and sweet peppers.

Been a while since I have been online due to the canning/dehydrating/freezing. So far this season I have done 6 triple berry pie filling for the freezer and 2 triple berry pie filling canned, 11 jars of blackberry jam, 20 jars of blackberry jelly, 6 pints of blackberry syrup, all from our blackberry bush in the back yard. 40 jars of elderberry jelly and 6 pints of elderberry syrup again from the elderberry bush in the back yard. 2 quarts of tomato sauce and 5 1/2 pints of ketchup. Beautyberries are just starting to come in so I still have that to look forward to. Dehydrating: I have also done 2 quarts of zucchini flour. Have tomatoes in the dehydrator for tomato powder now. Was only able to freeze a few peppers this year as our peppers did not do well this year...

There is never a road so long that there isn't a curve in it.

Theresa, I am impressed with all you have canned.

A side note: An extension agent told my sister years ago that some years certain crops do good, and others do not, but no one knew why.

Today I am prepping "black pepper & rosemary apples to can tomorrow. I went online and found out I can keep cored & peeled apple slices in lemon water in the fridge for 24 hours. With MS fatigue all my canning is done in stages so it's prep today and can tomorrow.

The canned apples will be paired mostly with pork and other meats.

Lisa, I put the peppercorns through my coffee/spice grinder. If you want the recipe I will send it to you. I had some leftover so I had it for a snack, really liked the flavor. It also has red onion slices.

I got 4 quarts and a pint of elderberry juice done yesterday. Got some tomatoes from my sister, since mine have done so poorly. Will be making pizza sauce as they ripen. Started on organizing the chest freezer that holds vegetables, and fruits and whatever. Its better but not by much. Need to spend more time on that project.

Michelle, good job on your elderberry juice. It's good you could get tomatoes from your sister for pizza sauce. I cut my tomato plants down over a week ago. Can't say I miss watering them every morning.
