It is peach season!!!! Every year I buy a subscription for peach delivery from a peach farmer in Georgia. Being a farmer, I know how much of my hard earned dollar goes to the middle man so if I can, I always buy directly from the producers. So every week for 8 weeks a beautiful box of peaches arrive on our doorstep, perfectly packed and almost ripe. We are on week 3 and I have decided I need a few new recipes to enjoy this delicious summer fruit. I would love to try your favorite peach recipe if you wouldn’t mind sharing it.

Fresh peach cobbler:
2 large peaches, peeled and sliced (I usually use 3 or 4)
1 1/2 cups sugar, divided
1/2 cup butter, melted
1 cup flour
2 tsp baking powder
1/4 tsp salt
dash of ground nutmeg
3/4 cup milk

In a bowl, combine peaches and 3/4 cup sugar, set aside. Pour butter into an 8" square baking dish. In a bowl, combine flower, baking powder, salt, nutmeg, and 3/4 cup sugar. Stir in milk just until combined. Pour over butter. Top with peaches. Do NOT stir. Bake at 375 degrees for 45-50 Minutes. Enjoy :)

Peach Salsa

Ingredients:
2 cups of peaches diced
1/4 cup minced red onion
2 teaspoons minced jalapeno remove ribs and seeds before mincing to reduce the heat level
1/3 cup chopped cilantro
the juice of one lime or more to taste
salt to taste

Instructions:
Place all of the ingredients in a bowl and stir to combine. Cover the bowl and refrigerate for at least 30 minutes or up to 1 day. Serve with chips or use as a condiment for chicken or fish.
NOTES
Make sure to cut your peaches into a fine dice so that you can easily scoop the salsa with a chip!

This salsa is on the mild side as the seeds and ribs are removed from the jalapeno. If you prefer a spicy salsa, you can leave some of the ribs and seeds in the pepper.

Julie, I don't have the recipe just an idea, but my dad always makes peach cobbler in the dutch oven. That is one of my favorite summer treats. I can always get it from him if you don't already have a recipe for that.

Hi Julie - here is one of my favourite salad recipes for the summer, using fresh peaches!

Fresh Peach Salad
1/4 cup sliced almonds
6 to 8 cups mixed greens of choice
3 small (or 2 large) ripe peaches
1 handful red onion slices
1/2 cup fresh corn (or grilled corn)
2 ounces soft goat cheese, crumbled
Add meat of choice for extra protein (I use grilled chicken)
For the Dressing:
1 1/2 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tbsp maple syrup
1/4 tsp Himalayan salt
Fresh ground black pepper
1/4 cup olive oil

Prep the fresh ingredients: slice the peaches; thinly slice the onion.
Make the dressing: in a small bowl, whisk together the vinegar, mustard, maple syrup, olive oil, salt, and several grinds of ground black pepper until thick and emulsified.
Serve: to serve, top the greens with peaches, almonds, red onion, goat cheese and corn, then drizzle with the dressing. Serve immediately.

I had to look this one up in my old cookbook-
Peach Sorbet
1 (4 serving) box of peach Jello
3/4 c. Boiling water
1 1/2 c. Mashed or pureed peaches
3/4 c. Light corn syrup
2 egg whites, unbeaten

Dissolve jello in boiling water, add the rest of the ingredients and pour I to a 9x13 pan. Freeze until partly frozen, about 2 hours. Spoon into a food processor or bowl and blend until smooth. Pour into a freezer container and freeze until frozen, about 6 hours.

Can also be made with strawberries.
