I found a site that has quite a bit of information on canning. I thought others might want to have a look.

I also want to start canning again this year. It has been years since I canned anything but i used to can tomatoes, salsa, and jellies. I just want to get back to doing it again and I know I will have to relearn the whole process.

We are talking about canning over in the Across the Fence forum under Farmgirl Mentors. Be glad to have you chime in over there. Thanks!

Thanks for that link, Shelle. I really, really hope to be able to do some canning this summer. Many years ago, I made jams and jellies, but I've never canned veggies.

Thanks Shelle, I'm always looking for info on this subject. I took a good class from my local extension office last year, but I'm still afraid to try it with my ceramic cook top. I ended up freezing veggies in my canning jars and they came out just great. I didn't know you could do that till I took that class. Thanks again, Lu
