Posted - Jun 07 2005 : 5:30:37 PM Chicken Breasts in Sun-Dried Tomato Cream Sauce: 1 T. Butter 1 garlic clove, minced 1 T. flour 3/4c chicken broth, divided 1/2 cup cream 3 T. chopped sundried tomatoes in oil 1 T. oil from the sundried tomatoes 1/4 t. thyme 1/4 t. salt 1/4 t. red pepper flakes 4 boneless, skinless chicken breasts In a large skillet, melt butter and cook garlic for 30 seconds. Stir in flour and cook 1 minute. Whisk in 1/2 cup broth, cream, tomatoes, thyme, salt and pepper flakes. Bring to a boil and cook 1 minute... Heat sundried tomato oil in skillet and saute chicken breasts (salt and pepper first) until juices run clear. Transfer to a serving plate. Add remaining 1/ cup broth and scrape up brown bits for flavor. Add cream sauce to heat through and then chicken to heat through.

This is one of those recipes that after you take a bite you say to yourself, "Self, you are a really great cook." :) LOL!!!
BTW, how do you dry your tomatoes - - in the oven? After you put it in oil and garlic, how do you store? Is this something you can? Teach me, teach me! :) |

Posted - Jun 07 2005 : 5:37:55 PM Oh my gosh Laura this sounds wonderful! I love any new recipe on preparing chicken, because it is sill an economical meat. Sundried tomatoes sound great! I sun dry Romas by the hundred in August and store them in olive oil and garlic marinade.
