I have been making cheese, or trying to learn. I make colby cheese curds, and then press them. I don't have a real press, but make do with a few items out of the cupboard. I have a new recipe book, and the curds are so squeky. My problem is that my pressed cheese stays good for about a week and then gets sour. I don't wax it, we just eat on it. Is this normal, or something I am doing wrong. Any help is appreciated. Michele
