 Solved the leftover pumpkin puree dilemma!

I have always avoided recipes that only use half the container of pumpkin puree because I hate wasting anything. I came across this recipe recently on the internet and gave it a try. It was delicious and made one big hearty bowlful for me. Now if a baking recipe calls for only half the pumpkin I will have a delicious way to use the other half!

PUMPKIN BREAKFAST BOWL

INGREDIENTS
3/4 cup pumpkin puree
1 banana
1/2 cup unsweetened almond milk
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon all spice
Toppings: whatever you'd like! Recommended: apple, walnuts, chia seeds, cinnamon
Directions
1 Combine smoothie bowl ingredients in a blender and pulse until smooth.
2 Transfer to a bowl and add toppings.
3 Enjoy!

Oh my gosh! This sounds delicious! I can’t wait to try this recipe with my left over pumpkin puree. I want to try it with chia seeds and bananas on top. Thank you for sharing!

I had this again for breakfast this morning and it was delicious. I topped it with pecans, dried raisins/cranberries and flax seed. I'm sure frozen bananas would work just fine with it Nini. I do hope you try it Joanie, please let me know if you like it.

Oh my goodness, Dawn - that sounds delightful! Thank you for sharing! You know... We freeze our leftover bananas and then use them as the base of milkshakes... I bet a frozen banana in this would be really great, too. My guys are going to go nuts for this! Thank you again! Hugs - Nini
