I am interested in making homemade noodles, I do not have a pasta machine. Would you have any recipes you would like to share? I make a noodle for huluski, but would it work in ham broth? I did not want it to turn out like ham pot pie.

Heres 5 recipes from Carla Emery book
1. Couple of eggs
Pinch of salt
All the flour it will absorb

2. 1/4 C egg yolks
1T cream
Enough flour to make a stiff dough

3. An eggshell of water
Pinch of salt & flour
A tsp of butter and seasonings
( pepper, ginger or nutmeg)

4. Green noodles
Some garden spinach or other greens
(Dandelion?)
Cook and puree
3 eggs
1/2 C spinach puree
2 T butter
Enough flour for a stiff dough

5. ( I use this one all the time )
1 egg
1/2 t. Salt
2 T milk
1 C flour m.o.l.
.........,.,..............
For all recipes:
Roll out dough like pie crust (1/8 in thick)
Cut in strips and lay out to dry.
Can use right away even if still damp.
Thinner noodles cook faster than plumper noodles.

That's all I know...I did find a noodle maker at a salvation army thrift store for 50 cents....keep your eye open and ask around...I also found a hand held noodle cutter that looks sort of like a pizza cutter but it has 4 roller cutting blades with a little hood thing over them for holding...never use it tho. Love my noodles!

I've made homemade pasta using your basic recipe without a machine. It came out good and tasted better than store bought.
