Why would you need to peel tomatoes to raw pack in jars?

if you dunk the tomatos in boiling water the correct amount of time, and then dunk in cold water, the skins should just slide off...

Yes that is how I would do it but as I have already canned 58 quarts of tomatoes I really don't want to take the time to peel.

I never have peeled tomatoes and have always had success. I think maybe some people don't like the skins in the tomatoes because when they cook they seperated from the tomato.
